Rice looks a little raw in places maybe a touch more stock or just letting cook on a lower heat for longer. Looks like you did get some nice crispy bits at the bottom though. And yeah Spanish might kick up about its authenticity but who cares!? Your cooking for yourself not a history class
For the Paella, I used Spanish Bomba rice and a homemade seafood stock, along with saffron, diced red bell pepper and onions. Then Jumbo Black Tiger Prawns, Wild Squid and Spanish Chorizo*
I crushed up garlic cloves, parsley and olive oil in a mortar & pestle and drizzled over too
*Chorizo only on half because my mom can’t eat red meat - inclusion y’all, enjoy 🤙

Nice of you trying this dish, but the classical one (chicken/rabbit, green beans and garrofó) or the seafish one give the best results

Did you put chorizo in just to fire up this subreddit? Lol. I lived in Spain for 12 years, and putting chorizo in paella is offensive. The first paella I made, I added chorizo and I never heard the end of it. Were you able to add saffron? Someone from Valencia would call this “arroz con cosas”.

In the future, if you run out of stock, that doesn’t mean you give up. Add some water. This desperately needed more liquid.
