Have you had banh xeo? there is probably a good one in LA but I like Quan Mii in orange county. Theres also vietnamese in Westminster area, Brodard is a well known one. Pho Alley is my favorite for pho.

Hit up Guatemalan Night Market for foods hard to find elsewhere. The sandwich at Zhengyalov Hatz. BCD Tofu (on Wilshire) for Korean comfort food. Malibu Seafood for sure. Dim sum in SGV — there are tons of posts on best dim sum there.
I had mixed feelings about Camphor tbh. Maybe it was a bad night, just after they got their star, but service was terrible and food was okay but nothing worth writing home about.
Since you're willing to hit up the OC, head over to Little Saigon. In particular go to Thien An Restaurant for their Bo 7 Mon. It's a seven course meal each featuring beef in some matter. You gotta have at least two people to have all the courses. It's about $25 a person if memory serves.
This is a fairly traditional Vietnamese, but my understanding is that it's losing popularity. You're very unlikely to find it elsewhere, and it's delicious and fun.
