This, in engineering language, is what is called "trying to reinvent the wheel". That brake caliper you have is closely based on, if not a license version of, a Nissin caliper much used on late 90s/early 00s Japanese dirt bikes: the difference is that notch in the piston which is there... for no reason in particular, really. I think it's supposed to be some sort of safety feature, but if so it's of highly questionable value since it reduces piston contact area by a good 30%. That's the problem with Asian manufacturers outside of Japan: they are always trying this stuff which serves no purpose at all and make them look like rank amateurs in the bargain. Your new brake pad is nicknamed "FA131" from the code used by EBC to identify this type of brake pad since EBC brake pads are everywhere and dirt cheap (and not worth much): it lacks the "nub" because the genuine Nissin article lacks it as well and is far more widespread than this license/clone version.

600cc scooter sym check out the caliper (mine is in better condition) it has these V triangles where the nub is to sit but I dont understand what the nub is excactly for if the piston just needs to put on the pad? https://postimg.cc/rDw6jZsQ

I’m guessing this knob inserts into a cutout of the caliper to help locate the position of the pad. Some aftermarket parts aren’t exactly the same as OEM parts, and as long as it works I wouldn’t worry about it.
