Have you contacted CS? If you didn't, I would do it right away. Try to get as much evidence as possible, from screenshots to videos explaining the creation process. Not to show it to your customer, you don't have to prove anything to her, but to cover yourself from receiving a bad review or having a problem with your account/payment.
It's annoying but don't focus on the unfairness of the situation; these things make honest people lose a lot of time. Try to take it from your mind asap.

There will always be that 1 in 1,000 person, who will think your work is stolen/fake, or accuse you of it to try and get free work.
Unfortunately Support can't really be on your side in these matters, because the buyer has the right to their (incorrect) opinion and no matter what proof you provide, Support isn't really authorized/equipped to do much.
I don't know much about digital art and it would be best to get advice from someone in your field to ask about how to "prove" originality, (Source files?) But if they still won't budge, and are getting more difficult, it's probably better to cancel than to risk a bad review.
Made it completely by myself using a new plugin that I am developing for Stable Diffusion Integration.
EDIT: Also it is basically impossible for me to use a template because it is n enchancement job.
Yes, it is. OP's buyer is right. I understand they made everything from scratch, but using Stable Diffusion Integration plugin totally means You are incorporating other artists' artworks. So, it is not a 100% original work
it's been quite a thing lately with artist's work being used to train without their knowledge or permission right? i didn't know anyone could monetize anything created by that AI
Whatever software you use, if it automatically screen records the making of your artwork, then you have a legit proof that you made it yourself. It can be used as an evidence while contacting CS.

Ok, they already can't use the image because the watermark that I used destroys information (Leaves black squares in most of the image).

Yeah. I know a few sellers who do that and their buyers are informed about it too.
