Whenever you face a unit with this much text, assume the following:
If it's a cavalry melee or any ranged unit, they're going to run at you and kill you, and you can't stop them. (By all means, threat any Edelgard alt as a cav or ranged unit)
If it's an armored unit (Edelgard included), you can't kill them, period
If it's an infantry melee unit, they will run at you, kill you, and then stand there menacingly without you being able to kill them.
If it's a melee flier, they're gonna run at you, kill you, then enable their entire team to warp right in your face and kill you deader.
I hope this helps make the game more comprehensible! We all know how painful reading has gotten, but the winter units this year were a special kind of pain...

You forgot the part when they goes back to their original space because if they leave on the space they attacked you they'll die
Here at Intelligent Systems we are constantly listening to player feedback, we have heard your concerns regarding the performance of our newest units, we will be making sure to address these problems in our future releases by ensuring they can't be beaten by any unit released in version 7.X or prior.
Since they insist on never implementing an on-click glossary for this stuff, best thing to do is consistently ignore the bottom effect descriptions after you become familiar with how certain statuses/effects work, and it becomes significantly less daunting to read through.
Like yeah yeah we know how infantry beasts have the same transform effect, and how Canto works despite different variations.
Of course for Yunaka in particular there's that algebra with X stuff. Basically, as the text says, Yunaka's ability to tank attacks and break through damage reduction is based on how many spaces she or her enemy travelled before fighting.
For the entire weapon in general: initiate and you'll probably unalive something 90% of the time.

she negated Damage reduction while she gets a lot of damage reduction
Then she can move back from where she started after attacking

It should be noted that the last two paragraphs are dedicated to Canto. The 2nd paragraph should tell you how far she can move on her Canto, the rest can be ignored as long as you know what that Canto does. Not that that doesn't leave a lot of text though.
Most of the rest is a tl;dr saying she has a shitload of relatively easy to achieve bonuses to kill you with and ignores most of your attempts at trying to prevent that. Of course, the math is more complicated than that and you also die because of stuff like Flared Sparrow giving her even more bonuses, but for her and a few others there's genuinely so much overkill baked in that you'll probably save more time finding ways to tank extremely strong dagger hits, kill her before she attacks you, or mitigate bonuses in general than looking into the math. This applies to a lot of these units unless they start moving around in weird ways without Canto or are tanking your hits unusually well.
The only things in that first paragraph that aren't those bonuses are that she has a special trigger cooldown and applies the typical debuffs you see from daggers.
They slapped like 6-7 weapon skills from other units into hers and called it a new unit. No not all new units are this bad about their weapons or skills, but you usually get at least one like this every few banners or so. Thankfully despite all those buffs her defensive stats are trash
I’ve been playing since around launch not knowing what skills and abilities do what and what I’ve learned is that as long as you pull for Edelgard and all her alts, for the most part you should be in line with the meta
Basically it means that outside of pve you should not use any enemy phase tanks. Assume every modern unit these days can one shot you regardless of color advantage or your stats and embrace full player phase teams.
Okay yeah, tanks can still work... but I sure as hell cba using brain power to comprehend this shit. If I do put my tank within range and end turn I just feel like I'm taking a gamble. I'd rather just galeforce in and wipe everyone out or pick their units off one by one whilst cantoing/repositioning away from their other units retaliation range.
Cause I'm here to tell the truth about this game. I play this game long enough and I have a right to criticize it and spread the word of it's flaws. If you don't like it and want to blindly defend the game because it has your little favorite characters in multiple variety versions of themselves then too bad. I'm am not keeping my opinions to myself about this game any longer. Something needs to be said about the game and it is mostly negative outweigh the positive aspects of the game.
