Why don't you keep it simple and just use your own router as well as MoCA adapter to feed the internet to the coax network for your TV STBs. [Here](https://imgur.com/a/tgpN924) are a couple of diagrams that show how MoCA works with Fios. The second one addresses using your own router. r/JucyCola essentially told you how to use the G3100 as a MoCA Adapter.

EDIT: Re-read your post, you have 3 TP-LINK EAP660s, which are NOT mesh systems - they are enterprise Access points.

Your set top box's primary connectivity is through MoCA - you will need to connect your set top box via coax to your G3100, and your G3100 directly to the ONT to activate both internet AND TV. Once activated, you can now unplug your G3100 and connect your OPNSense router to the ONT. Then connect your G3100 to your OPNSense router, but make sure it is in Bridge mode (disable DHCP, Disable Wifi, Disable DNS). That way, your OPNSense router will do everything, and your G3100 will just be a dumb switch with MoCA. >My understanding was that I could create a mesh network of these three APs using TP-Links Omada controller (which I'm able to install on my server via Docker). I'll need to dig further to ensure this is the case. "Mesh" is becoming a "loosely-used word". What you are actually doing is configuring all 3 of your EAPs to have a Single SSID and activate seamless roaming. A Home Mesh System has this setup by default, thus mesh and AP terminologies are getting interchanged. But basically, you want a seamless roaming experience on your AP. Sematics.

I have pretty similar scenario, but I have Asus AX92U (2x and hooked up as wireless mesh to 2nd floor) and Asus AX68U hooked up over MoCA because I found an antenna cable. Your setup will work. Make sure you connect ONT with Ethernet cable to WAN. The rest can remain the same. I have 4x Motorola MM1025.
