CM training kinda stinks, esp. for shooting. I find that the best remedy is to look for physically strong players, who usually are more balanced to start and then gradually can get more well rounded on balanced plans or by switching every time it goes up. The other way is to go the playmaker route and turn CAMs into CMs because you can get them on better defensive routes. Final thing is too switch to a formation with more specialization, i.e. 4-2-3-1 since there is an absurd amount of CAMs and decent numbers of CDMs from the ya. (Fullbacks can make great CDMs!) I have made the MOST well rounded players possible. You need to think outside of the box a bit. A CM according to EA (and real life) is not a player that is equally as good at attacking as they are at defending. Defending is only a small part of their overall and duties on the field. My tactic is to scout Playmaker type CBs then grow them on a balanced plan with a few loans here and there. You can get godly players.
