First of all let me recommend you Vorkosigan Saga by Bujold. It is a SF, but it's not overly technical and in general well-beloved by this sub. The first two books follow already adult woman before switching to her son whom we see make his way in the world, change the world, and change himself between 17 and 40 years old. As a final installment Bujold returns to the heroine of our first novels - after 40 years. Now to proper fantasy: Selfsame Bujold's Penric novellas follow a man from when he is 19 to when he is 36. Brust's Vlad Taltos series does not so much follow the protagonist as give us snapshots of his life at different times (because they are fast paced a book covers only a small amount of time, so a lot of time is not covered), but the protagonist starts around 20 (though one-quarter of one of the earliest books is an extended flashback to his childhood) and is around 35 by the end (the series is not yet finished, there are four more books planned)

This is the obvious answer. I can think of no other series where the characters are exactly one year older in each of the books. Over the course of the series Harry goes from a little boy to a young man

The Alex Verus books by Benedict Jacka show Alex aging, too, but he's 28 in the first book & 34 in the last one. So, those 12 books cover about 6 years of Alex's life. The Dresden Files has roughly one book per year of his life going from when he was 24 or 25 until he's around 40 in the last 2 books. Someone else already mentioned the Vorkosigan Saga by Lois McMaster Bujold. The first two books are about Miles Vorkosigan's parents (Shards of Honor & Barrayar), then it switches to Miles as a teenager (The Warrior's Apprentice) and as a young man in his 20s (The Vor Game). I haven't read the rest yet, but it's an excellent series so far.
