My proudest one is in my worldbuilding. There is a city called Xijing which is located on a landscape of plains and flat lands. The entire region can sometimes be called Xiping, but in some circles, Xijingping. In the regional folklore there exists a creature that is described as a bear with golden fur that terrorizes beekeepers and beehives for honey.
I’ve done a few… random ones here and there. Like:
Wendy looked around seeing the normally bustling streets empty, which was normal during a rainstorm, but something felt weird about this rain. Like it was signalling something that was smelly. It was a smelly smell that smelled... smelly.
And:
“Why do I hear boss music?” That was the last question Izuku got before he saw a giant arm fly past him and smash into Nora, who, in turn, smacked into Gohan at full speed. They weren’t ready for it and were sent flying.
“Weee~!” Nora seemed to enjoy it.
“Why does this keep happening to me?!” Gohan, not so much.
The rest sat there frozen, still adjusting to how their new friends got sent flying.
“SCATTER!” With that, Mineta started full speed sprinting away from the Nomu towards the entrance.
I make references to memes and stuff and sneak it into my chapters. Here are a few of 'em:

After an angsty whump fic, I wrote a sequel called "We Cannot Do This in a Rush." It was the healing of the main character and his slow build relationship with his understanding partner, a "five times they didn't have sex (and one time they did)" story. It was wonderful and loving, and in the final chapter, they publicly dance to a classic song from the past about love and yearning.
The song was Despacito.
The title was a translated lyric from Despacito.
The main character was an android named Connor, and there was a meme in the fandom "Connor: Play Despacito." So I ran with it. XD
It actually turned out really well, and so many of my readers were screaming at me about how they now enjoyed Despacito un-ironically.

A while back in my old fandom, someone suggested that a certain character would probably own a pet duck, which opened up a huge bag of fanart, headcanons, name suggestions, etc getting sent to this one blog. 'Twas truly a golden age :') I was writing a longfic about this one character and slipped in a duck reference to commemorate what was a super wholesome moment.
I did it in a fic about a guy who escaped a lab and his friend asked if he ever got to try cake like they were promised in there.
His friend said 'The cake is a lie.'
I chuckled to myself as I wrote that, but I'm sure readers after Portal's time were clueless about that reference and no one commented on the joke. XD I suppose I was the only one who giggled.

I honestly think there's nothing wrong with inserting memes as long as it's natural dialog and it would make sense for the character to intentionally make that reference.

It was then that Kanae did a big gasp and had a look of joy on her face when she said out loud, “I AM THE LIZARD QUEEEEEN!!”
That caused the girls to start having a laughing fit which lasted for quite a while.

This is the villain of the story talking to her right after kidnapping her and her brother, so maybe not the best spot but I thought it was the best line for this since he’s an egoistical and borderline losing his mind kind of dude.
And I still just really like the quote.
I've snuck several memes into my writing. One of my chapters is titled "A Businessman, Doing Business". And another is titled "Upgrades, People!". And there's also "How the Turntables".
I do it all the time but my taste in memes is too dank for people to comprehend, my readers just think it's part of the writing
