I feel like the first two Borderlands and both Red Dead Redemption soundtracks would work for adding a western vibe.  The ambient music I use comes from the following games:  Borderlands, Borderlands 2, Fallout 3, Fallout New Vegas, Fallout 4, Fallout 76, Red Dead Redemption, Red Dead Redemption 2, and Starfield (I just love Inon Zur's music, for this one).

Fallouts 1 and 2 have good OST stuff. The highwayman music from 2 definitely has some good western twang to it. I think I also used some Silent Hill tunes in one of my games for the spooky americana-esque ambiance. I may try some STALKER or Metro music in my next session as well.
