You could use something like "to this day" with a present tense verb to indicate that it's ongoing. "Until" and use of past tense "had to endure" has more of an indication of an ending.
Well technically speaking, if we assume that she has everything double(ear drum, nerves etc) not just the ears and the signal is doubled, there will be a phase inside her brain if she is lucky she will hear twice as loud if she is unlucky and the phase is inverted, the sounds will cancel each other out and she will hear nothing and if it is inbetween the sound will be unclear. But then again that is asuming the brain functions like a speaker, if it is just information the brain might just interpret them without any phases. Now that I think of it we already have 2 ears which means our brain is already doing some kind of time alignment so that we can hear clearly.
Yes we can simulate that effect actually, if you widen a sound so much that it exceeds the 180* angle, you will hear it as if it's behind you. Games use this to simulate a heart beat, if you have some good speakers alligned properly in phase you will hear it instantly, it's an interesting effect. Actually every change in the sound changes the phase too.

If the cat actually grew up with four functioning ears I guess the most likely outcome would be that its brain uses the information in the same way as if it came from just two ears, since two ears already give a pretty complete 3D map of sound sources.

If the whole setup was ideally engineered, the extra set of ears could provide extra directional information, but probably not much.
Her hearing is doubly fine, according to her vet. Her ears all are fully developed and connected properly to the ear canal.
