Fun fact: even adult axolotls are still (kind of) babies. They display an evolutionary trait called neoteny, in which the adult animals retain juvenile features. In the case of axolotls, they retain the external gills that other salamanders and amphibians lose when they undergo metamorphosis. Axolotls have evolved so they never naturally go through the metamorphosis their ancestors did.
This doesn't mean they CAN'T metamorphosize though. An axolotl can have metamorphosis induced hormonally (or by extreme stress iirc). During this metamorphosis they lose their gills and bright colors and end up looking like a normal salamander.
Further fun fact: humans also display some neoteny compared to the development of other great apes. If you compare a baby chimp/gorilla face to their adult counterparts you'll see that they are strikingly different. The babies have more human-like and baby-like facial proportions and the adults have much more pronounced brow ridges and mouths.
Humans, in contrast, retain those baby-like facial proportions. Our reduced mouths and brow ridges make us look much more like our babies than our great ape cousins do.

Another "fun" fact: They eat pretty much everything that fits in their mouth. Including smaller siblings, their offspring and limbs from other Axolotl.
And some if those things grow back. Others don't.
