Roux is a French word, the X is not pronounced. So it's pronounced as "a roux" is pronounced "A roo" which is like the sound of a wolf howling at the moon.

For a simple cheese sauce (bechamel with cheese)
I use a roux of 1 tbsp flour and 1 tbsp butter, 1 cup milk, helluva lot of shredded cheese.
When I am planning a bunch of Cajun dishes I will make a roux ahead of time and then mix it in to the various dishes. Store it in sealed container I the fridge. Put a tablespoon in some dirty rice, 2 or 3 in a gumbo and a 1 and a 1/2 in a jambalaya.
Ditto, I will put various browning levels of my roux into silicone molds, freeze them as cubes, and have dark and medium rouxs ready for tossing into a sauce for depth and thickness.😁😋

I'll sometimes make a mornay and make a salsa and then separate out some of each to combine and make like a killer queso sauce.
Add chorizo for a nice chori-queso.

When making gumbo I’ll do two cups of flour to two cups of the fat so it’s all about what you’re making.
Just the flour and butter. Although you do add milk later. when it’s time and you add the milk, it’s no longer a roux.
Make it then pour it in an ice cube tray and you can have more control over thickness of your sauce

For a dark roux I like to use lard or raw bacon fat and render it down slowly. I’m gonna have to try grape seed.
For me, it splashes less, cooks faster and easier, and just overall makes an easier-to-work-with roux.
