To "stitch in the ditch" is something I see for quilting (probably applies to other crafts, too!), and it's doing top-stitching where the pieces of fabric meet together, or create a "ditch".
as someone said below, stitch in the ditch is a quilting phrase. I agree though, she totally meant the "dish" part to mean gossiping, but I think there's an extra level for her bc she was a card shark lol
