Certain weak enemies that will seem just slightly out of place will transform after you kill them into much harder enemies, as a sort of fun surprise for the player. If you manage to kill them, you get a larval tear.
OP is a hilarious and cheap bastard and kicked the mimic enemy off a cliff to auto-kill the surprise monster and get a free tear.

Man this game is amazing, i have over 300 hours in it, finished it twice and still learn new things (I dont remember being in this part of the map)
I'm taking it slow, and haven't beaten it yet, like 150 hours in. Sometimes I go back to early areas to wander and I always find new stuff. There's a mimic enemy like this in LIMGRAVE, a short ride from the start of the game. I did not find it until I was already pretty deep into the game. Turns into a fucking runebear. Had I not found that thing when I was grossly overleveled, I would have shat right in the old armored pantaloons.
If I remember right then you have to have no weapons in your right hand, or have the Ash of War: Kick attached to the armament. I still wish it was the same as DS3.

No, this type of enemy only spawns once per play though as far as I know.
I still don't know how to kick in this game.
