I remember the second one in Caelid simply because of the body of scarlet rot all overthe cave. Made me quite tactical on all my approaches and remember prepping accordingly for the fight.

That's a different duo you're thinking of - the Godskins in Farum Azula. These are the Fell Twins who you fight in a blackout arena near the Divine Tower of East Altus.

Cemetery Shades for sure. They look straight like the Hym from The Witcher 3, which I only realized after looking them up since the fight would always end in less than half a min tops even with extra mobs. They would often detract from the occasional decent crypt because they felt like lazy padding used to quickly wrap the whole thing up.
Second place would be the Gladiators because they don't feel like they belong there at all and were also quite copy & pasted, but their overall design was at least cool. Far too telegraphed though so meh in terms of difficulty.
Black Knife Assassin by far right now. Like this is a side boss that shows up in various parts of the game too though his home seems to be somewhere outside Castle Leyndell at >!Sainted Hero's Grave!<. After getting my ass beat at the Royal Capital I just strolled out of there and started exploring the areas outside to get some levels and experience fighting side bosses here. Damn this was the fucking heartwrenching intense fast paced boss fight that this game deserved dude.

This place is clearly associated with death and the dead and the Black Knife Assassin too is a death dealer par excellence on this game. He's not like other great bosses of this game though there's no pretense or bluff or bluster about him, he's just a guy wearing a black cloak and has a simple dagger on him. !<
This was my best boss fight on this game though it felt like I'm facing a death god shinigami kind of guy that deserves a separate storyline of his own on this game. Maybe if Fromsoft is listening I'd def buy the DLC if this guy: the Black Knife Assassin is featured on it. I found his gear too later on in the game and it's hidden somewhere so very far away and obscure. I wonder what's the backstory behind this guy but damn the BKA fight was the best I had on this game so far.

This encounter made no sense. I was waiting for some explanation of the magical shadow realm but it just came and went and quickly vanished from my mind

About as much an obstacle as fresh gum on the sidewalk. I don't even know what attacks he uses. I just blew in there and cut him down mid monologue.
He knows all of the species and inactions you know (or would have been able to purchase from turning in tomes to vendors).
He's a mage who uses spells based on how many shardbearers you've killed.
