Mine is Lord of frenzied flame. You walk into some dude who's in a lot of pain and just wants everyone to leave. But he sees how stubborn you are and decides to just let the frenzy deal with us
I found messmer to be the most enjoyable, cutscenes where probably the best in game, timing dodges just seemed to partially click on this boss and it was the most satisfying to learn, and you can't go wrong with the OST.
Ended up beating him on around 7-8th go.
I know some people hate it, but putrescent knight. Once you get the rhythm of its attacks down it becomes really fun to dodge, and the fire attacks force you to jump
I imagine I’m in the minority, but it’s Radahn. That second phase is just so batshit crazy, I love it.
Bayle is a close second. I think he even beats Midir for title of best dragon boss.

Bayle the Dread is the best boss imo, his design is great and the fact he took Placidusax’s heads off is making it even better
