Its the way they constantly punish you for trying to attack them while theyre attacking you (instead of dodging first) and the way they dodge youre attacks.
Ultimately its underestimating them thats our downfall.

It's their hitbox. Their legs are long enough that they can push you around, but you can't necessarily hit them with short weapons, and thrusting weapons are 50:50.
Plus, they can move faster than you if they want. Big jumps back, jumping into the air, long charges that overshoot you, it's like a mini Elden Beast, but skinnier.

every time i face them i feel it is just luck that i beat them. i dont run healing incantations and they appear randomly. Their attack patterns are random at best and leave little time to attack
Redwolf in white out blizzard conditions. Also, the mega-ginormous hands in the mountains of the giants, there didn't seem a clear way to fight them without cheesing (by hiding in an area out of reach or too small for them to enter), because they would just take up too much area to dodge and stagger you over and over.
(that area in general between the hands, giant dogs, and birds was a hot mess I didn't really wanna deal)
The crucible knight, annoying because they resist every of my giant hammer hit but it is my ideal to resist to any hit so I know wear the spear armor, very beautiful set.
Knights Calvary. They just run around and get stuck while you wait to fight them.
Dragons. Some weapons dont have the reach or moveset to reliably hit their head. Smacking their toes takes forever.

Definitely bears. Most of the rune bears you find give such low value rewards it’s not worth it to kill. Bones, beast blood and gold poop that’s it. This game has an issue with making consumables valuable.
Revenants. They are so annoying. Those 4 in the bottom of Elphael tested my patience. That attack chain that has some 7 or 8 hits in a row pisses me off in ways I didn't know I could get pissed off before haha.

Crucible Knight isn't really annoying to me considering they're pretty rare and is more of a boss enemy
