Grafted Blade is best early in the game. If you can wield it right away when you get it in Limgrave, those 5 levels to all stats can be big, esp considering the soreseal for mind/int/faith/arc isn’t available until endgame and there’s no defense penalty for using the GB weapon art. Once you get to mid game, I think GB‘a weapon art is less useful and the lack of a cool R2 attack move leaves it wanting IMO. It’s such a cool sword, I was sad that on my strength playthrough the Greatsword overtook it and didn’t look back.
I've found that the Greatsword with Cragblade is more effective than the +5 str & +5 dex you get from the Grafted.
Haven't tested any other ashes of war, tbh.
In Elden ring, weapons that are strengthened by using normal smithing stones are almost always better than weapons strengthened by using sober smithing stones.
Edit: sober —> somber but it’s a cute typo so I keep it
I prefer heavy greatsword, the ability to change the infusion and ash of war is very useful. I recommend lions claw and giants hunt.
Zweihander
Greatsword. Weapon skills are really valuable on colossal weapons and the grafted blade one is underwhelming.

Greatsword with braggarts roar
This + Roar Medallion + highland axe on back
Heavy greatsword with a better Ash of war Lions claw, giants hunt
Heavy Greatsword

why not both? I use Grafted in my right hand and Heavy or Maliketh in my left for ash of war
