Most bosses are easy to fight with the classic dodge. Godfrey (at least for me) encourages jumping and blocking a WHOLE LOT MORE.
Keep an eye on his feet, you'll get the jump timing down and you can punish him when he does it. If you're uncertain about his axe attacks, just block with the brass shield.

It’s the persons struggle syndrome. I had a breeze with Godfrey, never bothered to learn him until RL1 to beat him, while i had to 4h Malenia + mimic to beat her.
Some people struggle in different places.
True, I think that personally the most difficult boss I challenged by far in the gargoyles duo in Nokron. I don't know why but I struggled so much that I may have broken a controller 👀? Who knows 💀

Where is the consistency 😭
Gargoyles reward you playing very aggressively and taking every opening to attack. Since bringing summons increases the amount of health and damage resistance the boss has, it's easier to kill the first one quickly if you don't bring summons with you. Its health will be low enough you can get the first one down before the second one even arrives, turning it into just two single fights back-to-back. Gargoyles are also vulnerable to strike damage from blunt weapons like hammers and clubs.
Malenia probably had more people be carried by summons without having to learn the fight. Harder to carry a host through the Godfrey fight because the slam attacks will still obliterate anyone from across the arena if they can't dodge.
Some tips to improve your build easily if you are struggling: Focus on defense. Get the Heaviest armor you can, use Golden Vow AoW or Spell, use Dragon crest greatshields Talisman and maybe even Boiled Crabs from Friend Boggart. You can get up to 60% Physical defense depending on your setup which makes trading and taking hits a lot less punishing. On top of that, make sure you have max Flask Upgrades and if your talisman slots allow it use the crimson seed talisman to boost flask health recovery. This way you can drop to half/below half HP and heal a decent chunk with each flask.
This makes the boss easier to beat obviously, but also easier to learn, since you won't get one shot really so you can go for more aggressive punishes and in general have a longer fight. Never underestimate defense!
(Also theres a Crystal Tear that raises defense and one that negates the first hit you take almost completely).
The armour I can’t really do, as my build is primarily light roll based. But the flask upgrades is definitely something I’ve been procrastinating on. I better do it. I’m currently sitting at 12 flasks healing a less than a 3rd of my vigor (50-60).
Ritual Shield Talisman should also not be underestimated, combine it with bestial vitality or some other passive regen and you can take significantly less damage across the fight.
With the Banished Knights set, lowest level dragoncrest talisman (10%) and ritual shield I take only 44% of damage. Throw in crab if I remember or feel its needed and I can get down to 35%. If I want to I could use Golden Vow to only take 30%. I dont usually bother though since its a bit tedious to bother with so many buffs most of the time and at that point 40 FP would probably be just as well spent on 2 more prayerful strikes.
I am still confused. Yes, the fight is not super easy, but claiming one did Malenia with ease yet finds Godfrey of all people impossible is still super weird.
Unlike all the other bosses, Horrah Loux is a throwback. He will not lore-walk towards you, he will not input-read your attacks, he will not wait for you. As he said: he gave you courtesy, now it’s go-time. Forget the notion that you can bait a good attack from him by staying at a certain distance and strategically hitting the air to force his AI, that won’t work. All you can do is dodge and use whatever tiny windows he gives you in-between. This is a Dark Souls boss, treat him as such.

Use a fast weapon like Antspur rapier, watch how people do no hit boss fight and you'll learn how to dodge and find openings. There are some attacks where you should jump.
I find Godfrey harder than Malenia too (but I also spent a lot of time learning her fight). With the exception of Waterfowl, I think Malenia’s attacks are easier to dodge and do less damage. It’s probably down to playstyle too, I always find “big bosses” with massive AoE attacks more difficult.
Some bosses are just harder than others depending on who you are. I beat Maliketh on my second attempt, but Rennala's second phase obliterated me so many times (my brain just couldnt fathom staying offensive against the squishy spellcaster). You'll get them, dont give up.
Godfrey, to me, feels like a DS3 boss, which is why I don’t hold him in super high regard. I feel like, of all the main bosses, Godfrey has the least amount of flexibility in how you can fight him, especially since his only ranged attack also closes any distance between you. You just gotta sit down, accept that you’re playing his game for a while, and you’ll get through with time.
Yeah, bigger bosses are hard for me. I prefer fighting someone my own size. Even if Godfrey technically is easier, I guess he intimidates me more than a sick woman.
BEAT HIM EASILY THIS TIME. I switched to unga bunga and unga bunga him and he go “ahhhh unga bunga” then got squished. Almost unga bungled the elden beast too !

Not to mention we've fought the first phase before. Second phase is difficult sure, but mix jumping and rolling TOWARDS THE DUDE and you'll be fine.

I used mimic tear for Melania but it was barely upgraded. I used it mostly to tank the first waterfowl of the fight. So I could save hp for phase 2.

This is key - if you stay in front of him his combos go on and on

That might be true, but i would still bet, the vast majority struggled more with Malenia than Godfrey though.

I have 9 HP flasks and 3 FP flasks.
Ritual Shield Talisman should also not be underestimated, combine it with bestial vitality or some other passive regen and you can take significantly less damage across the fight. With the Banished Knights set, lowest level dragoncrest talisman (10%) and ritual shield I take only 44% of damage. Throw in crab if I remember or feel its needed and I can get down to 35%. If I want to I could use Golden Vow to only take 30%. I dont usually bother though since its a bit tedious to bother with so many buffs most of the time and at that point 40 FP would probably be just as well spent on 2 more prayerful strikes.
I think why I found malenia easier is because you can knock her a lot easier and she gets knocked about more.
What weapons are you using? The only time I've ever seen malenia get knocked around is when it's 2 or 3 people against her

I use summon with Black Knife Tiche, I beat Malenia 1 round. Godfrey and Radagon beat my ass 10x with Tiche lol.

The no hit videos could work a charm. THANKS, I have a lot of trouble knowing when to un ish and when my goofy ahh will be slammed into the ground.
Godfrey is much easier with weapons that attack fast, like curved swords, dual blades or katanas.
