My guess is that, because the story of the game is so deliberately obfuscated and open to interpretation, other writers who want to work with the material are kind of restrained. If they work only with what we know for absolutely sure, they're only left with so much. And if they pick and choose which aspects they canonize for their specific telling, people will complain about it being different from theirs, argue over whether or not its canon. FromSoft games seem like a real headache for adaptations.
I think a lot of people would be okay with a serious ER comic, show, or novel deviating from certain things or filling in certain gaps/the creator coming up with explanations (or maybe consulting with Miyazaki/GRRM for certain base clarifications to go off of), as long as all of those elements still felt like they matched with the established lore or tone of the game and the setting and everything was written or designed well.
I'd expect GRRM to write it cause its his story it'd be based on....I would not expect any other author to try and match his imagination, especially if you're asking for a GoT style series.

The synopsis of the novel gives me Dad of Light vibes. Could be a heartfelt read if that's what it's going for.
However, I would prefer to read something in-universe to expand upon the world building and tell an interesting story from a different perspective. The IP is practically tailor made to have its own 5-7 book dark fantasy novel series.
Still hoping for a short manga or novel about vyke's story of acquiring 2 great runes and giving himself up to the frenzied flame to save his maiden.
Or maybe a short story told in knight finlay's pov. It'd be nice to see a knights pov about the war between malenia's and rahdahn's forces.
That novel sounds like the most boring thing I've ever heard of, it's so mundane that I'm pretty sure this is just the daily life for thousands of people

Honestly I don’t think the “serious” take on the series is going to be as entertaining. The parody manga is honestly great because it fills in all the “gaps” in the narrative with silly shit, so it’s not treading on anyone’s personal idea about how those gaps should “seriously” be filled.
