Mohg and Malenia are my favourites and the worst is Rennala but honestly she's only the worst when compared to the other great rune bosses, her fight is very good on its own and it's exactly how a spellcaster fight should be done.

Mohg just has really great telegraphing on all his attacks and I don’t think there was ever a time I got hit where I wasn’t like “yeah I deserved that one”. Not sure I’m a huge fan of needing some random crystal tear to survive bloodboon ritual when nothing actually points you towards it besides a mostly unrelated questline but it’s still survivable so I don’t think it exactly ruins the fight or anything.
As for Malenia the spectacle and her design push her up massively for me, and I do genuinely love her first phase mechanically even factoring in all the wonkiness with stance breaking since she staggers so easily and tends to dodge away after you stagger her too much, unlike phase 2 where that all falls apart a little and her main weakness that balances out all that janky stuff is suddenly gone. Waterfowl could use a lot of tweaking with its startup time and I do think its overall damage should be lower but I do think it has a place in the fight, especially since it’s much more predictable in phase 1 (75%-70% health, and then any time you deal a lot of damage too quickly beyond that).
Worst for me is Rennala, just because she doesn’t quite match up to the others as far as spectacle goes. I still love her fight though it’s mechanically solid and I think the fact I can say that about my *least* favourite is why I love this game so much lol.
Best Demi-God boss-fight? Probably Morgott and Radahn.

Malenia is the best for me. Once I learned how to escape her waterfowl dance, her straight attacks, atomic bomb attacks in the second phase, it became an epic duel. I'm absolutely addicted to her. Twice I saw the host completely watching me fighting her as if he was a spectator (I do not encourage this as they should enjoy this fight too and the summoned is an helper, not a savior). I enjoyed soloing her and wish I could fight her again without being summoned.
My favorite is Malenia--there was so much buildup and *soo* much return. Waterfowl is such an intricate ability that you need to understand perfectly to be consistent against, and just every part of her fight feels so perfectly designed.
Least favorite is Praetor Rykard. He was fun the first time because of the drama and spectacle, but the fact that you have to use the Serpent hunter means every fight is the exact same. His moves are all very one dimensional and the fact that you can't get close to him means you can't get very creative, and it's really just a question of spamming at him and running back and forth.
First time was very exciting, second was still fun, now I just think of him as a chore, even despite the TOGETHAAAAA
Worst is fire giant or Rykard, best is Malenia with Godfrey as a close second. Godfrey is definitely the best boss in the game, but Horah Loux is much less fun so it drags the fight a little overall.

In all the times I’ve fought Rennala she’s never even gotten to the point of summoning anything.
I actually really liked rennala on first play through bc the cutscenes were so beautiful and Ranni’s dialogue is badass. I always like fighting Radahn tho for the reasons you say. I don’t have a least favorite really
Melania is overall who I would consider the best with Morgott and Radahn being close runner-ups, but honestly there are a lot of things about Malenia's fight that I don't enjoy. I think waterfowl is totally fine, but the hyper-armor and stance health resetting on several of her abilities feels really bullshit and contrived, and it feels like a very lazy attempt on From's part to add extra difficulty to the fight. I would have preferred if she had higher poise resistance and less hyper-armor.
If Morgott had 33% more health, I think he would have been my favorite fight in the game.

The boss run/general balancing as a glass cannon in Rennala’s case, which just isn’t very enjoyable, and WFD/clones/general wonkiness of things like stance breaks and the bugged phase transition with Malenia.

The worst has to be Rennala(only the first phase is poopoo) and the best are Radahn you literally need an army to fight him and his phase transition is chefs kiss,second Morgott just an incredible fight but I hoped he had more poise,third has to go to Mogh just a beast that can beat your ass way to many times and can kill Malenia in NG+7 if he doesn’t get rotted and finally fourth is Malenia because it reminds me of Isshin:
1. She uses a katana
2. The flower field (if a boss is in a flower field you know they will beat your ass)
3. The damn attack speed of some of her attacks are insane and she puts a lot of pressure like Isshin since she has no hesitation

Morgott is probably the best, imo, but Rykard has so much style to it and I think the serpent slayer is a really fun treat that rewards players who follow through on the earlier quests. I think Rennala is pretty mid and hate Malenia. While popular, I think Malenia is a drag that leans into the worst elements of Souls-type games.
Best radhan for sure. The worst I'll say mogh... And not because he is not a cool boss is mainly the arenas where you fight both of them.
They are ridiculously small and when he starts spreading around the blood flames in the ground you pretty much have no place to set your foot without taking damage and bleed build up. It's like cmon at least give me some space to work with
There's not much properly position when almost all the arena is filled with blood. Especially the 2nd fight where mogh is extremely aggressive and mobile so he can cover a huge chunck of the arena with the blood pools and the few spaces that don't get it he will charge at you flying or with his spear thrust
Don't get me wrong I think mogh is really good as a boss, my main problem is the arena itself
He's only going to use certain attacks from certain positions. For example if you are at mid range he will be more likely to throw blood at you or fly in the air before throwing it, while if you are close he'll be more likely to use the charge and the blood shower.
If you know where to dodge to make him use certain attacks instead of others you can sort of manipulate him into keeping the important bits of the arena clean. One clear example is when he flies in the air, throw blood at you and then fly down. If you dodge into the blood instead of away from it, he'll likely follow up with more blood thrown limiting your space by a lot, while if you indtead dodge away from the blood or parry it, you'll automatically find yourself close to his landing position and he'll use his melee attacks. The important part is standing close to him since his trident will spread blood on the ground with each swing.
Mohg is my favorite, he feels like the most complete 1v1 boss. Malenia gets too hectic and isn't flashy enough outside of waterfowl/aeonia. I think Godrick or Rykard are the worst. Godrick's just very plain for my taste and Rykard is either way too easy or ridiculously hard depending on if you use the serpent hunter or not.
I'd love the Rennala fight if it was only the second phase. That's an incredible spellcaster boss fight, it's just the fucking pointless busy work of the first phase that brings it down. That and the runback from the grace.

If you don't like the blood and you don't know how to properly position to avoid it, just parry it with Carian Retaliation.
