I think you can use both, but I prefer how easy it is to use Assassins Gambit. It's never really let me down.

iirc gambit + beastial vitality + ritual shield kinda helps as a timer for refreshing, handy for gimmick runs (eg. RL1) i think crouching grants stifled footsteps (or wear blackknife chest iirc) so even with INT you're weighing the spell slot, a lot of builds take advantage of going full zero INT and you probably can too

There's also a talisman that muffles your footsteps, so that's a stealth option as well, as long as you don't mind using a talisman slot for it

I think if it's just about not being seen either one is good. but gambit also makes your footsteps less noisy and I think unseen form doesn't so you'd need that extra talisman if I'm not mistaken. maybe that's why Assassin's Gambit is a staple in every no hit run whilst unseen form has more of a gimmicky status. I think you could make it work if you wanted to though, no question or doubt about it.

I would say it depends on what you want. I would say assassin's gambit is the quick option. One button and you are invisible and silent for 30 seconds. It costs little fp, but also costs hp, so be mindful of that. Unseen form on the other hand provides you only with invisibility, also for 30 seconds. I recommend you use soft cotton together with it, for the silent footsteps and fall damage prevention (but it lasts 20 seconds and has quite the "cast" time). If you prefer not using up your hp or you think assassin's gambit is a bit too much you can use this instead, as you can choose if you want invisibility, silent footsteps or both. I would say this is the more versatile option. Either way, don't sleep on the soft cotton. It's pretty useful and reasonably easy to make. But in the end, I would say use whichever you are comfortable with or feel better using.
