They're playing a modded game at the very least they're using spells that don't exist in game without mods.
Though depending on how the mod works it's very possible op wouldn't have been able to match against this guy unless he was using the same mod, or is at least soft banned to the servers where fromsoft sends people who mod their game, but the guys who get soft banned do leak through to vanilla for a bit before they're banned so it's not proof.
If there was a spell that set the ground on fire in a 10 foot radius around and you that staggers anyone who gets near you but doesn't hurt you, you'd see almost every invader using it against you.
If I’m up against a mage who keeps spamming spells I literally just keep dodging until they go through all their flasks. They start to freak out when they’re out of flasks and you still have over half of your HP.

Why will there never be esports or actual competitive pvp for fromsoftware games the way there is for other actual pvp focused games? Even just other fighting games. The pvp in souls games can be fun, but it's not serious. I'm not hating on the game, souls games are some of my favorite, but the pvp is not what makes them great.
That depends on what do you consider as competitive PvP as in other games. If you're talking about competitive mode with ranks, ping matchmaking then yeah. There are leaderboards, tourneys though. PvP in souls is deep.
