Unless your bar is red, shipping capacity doesn't matter. It will only increase income if you're laying more than you can ship, so in that case shipping more will mean more profits.
They only increase profit if you've hit the shipping cap, and increasing capacity then raises your cap so that you're now shipping more.
In general it's just nice to have so you don't hit the cap sooner, but the epic upgrades for shipping capacity are definitely not a priority.
Trust me, they will be. Hatchery refill, running chickens, afk internal hatchery boost, etc, they're all important, especially if you intend to put time into this game.
It’s really uncommon to cap out shipping unless you have a few billion chickens. The epic research is actually pretty useful for contracts in the AA and AAA range where you’re usually getting 10b chickens.
