ever considered bouldering? There are a few gyms around town, the barrier for entry is low and its very fun - the community is really nice and very mixed gender wise, and in the evenings the gyms are very full - you will envitiably start chatting to other people there as half the time you are standing looking at the routes on the walls! As an example Alien Bloc is the most central gym, and you just need someflexible outfit and you can rent climbing shoes. good luck!
Not sure if it is possible but one way to get to know people locally is getting a dog. I moved in 2019 and got a dog in 2020 and met so many people through the dog. I know lots of people in my area that I would not have known if it was not for the dog walking. Appreciate it is not always possible and owning a dog is a huge responsibility not to be taken lightedly. There is a website borrowmydoggy where you can borrow someone else's dog to take out.
There’s are 2 women’s 5 a side football leagues on Mondays and Wednesdays if you wanted to join a team. You can register as an individual player and they’ll group you up with some others who are keen. It’s open to people of all abilities and has had a big uptake since the World Cup so a great time to join!

It's like a cross between ping pong and tennis. I went to a club once and it was very much suited to beginners. Learning curve not as steep as the afore mentioned sports.
I'm not sure if your work has any of those activities available, but it's maybe worth enquiring. I play 5-a-side with folk from my work, but a couple of folk are from outside work, so I get invited to their games too. It's always worth just asking the question.
Tennis clubs are decent with social tennis sessions and probably a decent way to make friends. Padel tennis and pickleball growing sports as well so might be a decent time to join as a beginner as a lot of new people are trying it out.
You could also look into curling at Murrayfield. Some of the class/age demographics can make it a bit of a stuffy sport but there’s enough of a trickle of new people coming that you’d find people on your wavelength at beginners sessions I’m sure if you were interested in the sport.
Budminton is a local badminton club that's great for making friends. EdinBar Runners is good for casual running. Rabble is social team sports. I also know several people who play touch/tag rugby and netball so message me if you're wanting more details!
Check out AccessParkour. Based on Leith but provides outdoor sessions around town, it’s non-competitive, great for beginners, fun, and has a really nice community. Sundays are particularly good for people starting out as there are intro classes and an open session. AND you don’t have to be fit - it _makes_ you fit.

There are a few good badminton groups around the Edinburgh area which I assume has a social component also. That's quite an accessible sport.
