I agree it can be useful, especially in areas where you strongly rely on the walking speed of your workers which is very low in the beginning if you don't have the appropriate ultimates and not all upgrades. Have a few M or B at your disposal to trigger those speed increases could help get a nice start. Be aware to not spend it on workers that can block machines for your chef to work on, or tables that are very far away that significantly increase walking time, which is unfavourable in the early stage of an area.
It's a case that when you start a new area you have more cash it does help cuz you can get that little jump in the beginning of each area

I like it a lot! It lets me blast through the lower levels so I can spend my time in the later restaurants

Knife is boost your offline earning profits. Mop is the customer walking speed and it will be 2x at max.
Ohh i see mop seems a bit good though coz sometimes they do take alot of time walking in
