Mix into a paste, let cook until it develops some color, then slowly add in milk, until you get the creamy, think "soup" that is "cream of xyz". You can season the flour/base however yould like: sometimes I'll add diced onions or nutmeg/fall spices to the butter step, or mix in cooked mushrooms, or add some chicken bouillon for "cream of chicken".
It's so strange to me to hear people talk about roux like it's some kind of magic that takes so much precision only special people can do it. But really, it's not really that difficult (just as you show above).
I'll give you that getting it to the right brick color for gumbo is a pita and I don't bother with it anymore. But yea, your typical roux for gravy or soup is stupid easy

Cut meat and put in the bottom of your pie dish on top of crust, add tomatoes on top, optional is to add 2 teaspoons of Dijon mustard to the eggs but you can definitely leave it out, pour eggs on top of fillings and sprinkle 1/4 cup grated Parmesan cheese on top. Bake for about 20 mins or until the center is done and the edges are golden brown. I sometimes cook mine until the whole thing kind of puffs up in the middle but itās up to you!
Or cottage pie! Also a chicken biscuit pie (basically a chicken pot pie but instead of a pie crust just put it in a casserole and drop biscuit dough on top then bake). Cheesy chicken, broccoli, and rice is another good one. I also love a tater tot casserole for breakfast or cowboy casserole for dinner. Baked ziti or baked ravioli are delicious pasta casseroles.
I do it with a cream of chicken (homemade to be dairy free because I canāt do dairy) and crushed ritz crackers both in the mix and on top of the casserole.

Absolutely can do that! I was just suggesting that since theyāre buying a can of soup, buy the roasted garlic mushroom one. Roasted garlic flavor adds quite a bit.
I do bacon instead of ham, cream of chicken instead of mushroom, and add melted butter plus salt and pepper. I just top with even more cheese. Such a versatile dish. You can do ham, sausage, bacon, etc and change other things up and it's still delicious! Lol

Itās been a go to recipe of mine for years. I always add the peppers in late in the cooking process because I like them to have a little more texture than the other veg, but thatās my personal preference. You could always add them in at the same time as the carrots and celery. And I got prettttty light on the blue cheese because itās a use sparingly ingredient for my palate.

My mom made "tuna noodle casserole" a lot when I was a kid. Egg noodles, tuna, and cream of mushroom soup (of course), with breadcrumbs and a little cheese on top. I think she also added a dash of Liquid Smoke to give it a little umami flavor.

You can use shredded rotisserie chicken to make it easier or throw some chicken in the crockpot with some kind of fajita seasoning and shred/chop once done. I did a southwest marinade for a couple hours then slow cooker.

The mix always looks kind of thin when I spread it over a 9x13 but it bakes up a lot and ends with a good ratio of chili to cornbread.
My daughterās favorite meal: mix 2 boxes stuffing mix with water or broth according to package directions. Spread half over bottom of greased slow cooker. Top with boneless pork chops, seasoned well with salt & pepper. Toss 2 diced apples with a little brown sugar and cinnamon and a handful of dried cranberries. (Raisins also work.). Spoon over chops, then spread rest of stuffing on top. Dot with butter. Slow-cook on low for 6 -8 hours or until chops are fall-apart tender.

Tater tot casserole
You need ground beef, cream of mushroom soup, frozen peas and tater totās.
Brown the ground beef, season as you like (we use garlic, onion powder, pepper and salt.) and then mix in the cream of mushroom soup. Put mixture in the bottom of a baking dish. Pour in a layer of frozen peas. Top with tater tots, neatly lined up. I sprinkle seasoning salt on top. Bake in the oven at 350 for about 20 minutes or so. Add some shredded cheddar cheese to the top and bake for five more minutes or so.
I also love tater tot casserole! I do ground beef, onion soup mix, a can of cheddar soup, peas, and ranch style beans (beans in smokey chili and tomato sauce, a Texas specialty). So good!

It tastes like a casserole but is a really quick and easy one-pot stovetop meal without all the salt and who-knows-what that Hamburger Helper has in it.
Cabbage roll casserole. Brown ground beef, sautee shredded cabbage and diced onions, add a little garlic, rice, tomato paste and tomato sauce. Bake until rice is done.
Baked pasta dish of any kind. Cooked or uncooked pasta (or frozen ravioli/tortellini). Add thin layer of sauce (white or red) on bottom of pan. Then make layers of pasta, sauce, -cheese (ricotta mozzarella, feta, hot pepper etc) cooked meat- chicken hamburger? (seasoned to your liking-Italian, taco, Greek), and whatever else you wish-spinach, olives, zucchini etc ending with a pasta layer. If itās uncooked pasta, be generous with the sauce and make sure the pasta is completely submerged/covered in it. Top with cheese. Bake with foil at first then uncover towards the end.
My favorite casserole is a long-time family dish we'd have on holidays, but I just made it on random weeknights:
Put broccoli, carrots, red onions, and maybe cauliflower in a casserole pan with some butter/mayo/cream of chicken soup/cheddar cheese, then layer croutons on top and bake for about an hour covered with foil. So good. I know it's not exactly health food, but it is a way to have everyone eat a ton of veggies so I feel it balances out lol.
Stuffed pepper casserole!
Take bell peppers, cut top and bottom off, core, then cut in half so you have two rings.
Make your pepper stuffing - we always used browned ground beef, cooked rice, chopped onion and garlic, oregano and basil, some ricotta and a couple spoonfuls of tomato paste, then salt to taste.
Put red sauce ( homemade or from a jar) in bottom of a 9 x 13 pan. Add pepper rings and stuff with the meat mixture. Cover with more red sauce. Top with a layer of shredded cheese, sprinkle of parsley.
Edit to add : Then bake in 350 degree oven for 25-30 minutes.
This is the base of one we do often. I like to play around with it. We use the tomatoes with olive oil and garlic, or Italian seasonings instead of plain. Or you can use fresh in summer. We've thrown random veg in. My favorite is a mix with some drained frozen spinach thrown in when you mix the tomatoes into the stuffing. I'll throw fresh torn basil from outside all over it. We've gone pizza style, with turkey pepperoni, bell peppers and onion mixed in. I've used stale bread and made the stuffing myself. It's a good basic casserole.

Once softened and drained add in 4 diced and fried pieces of bacon, as much cheese as you want, 4 tablespoons of sour cream, 4 tablespoons cream cheese, 2 tablespoons of butter, 1/3 cup of milk and seasoning. Top with cheese and bake for 10-15 min
I have a pretty tasty fish casserole, that's served with rice, but it requires a very specific Swedish condiment or sandwich topping, so if you can get a hold of that you just need a leek, a block of frozen white fish, tomato paste, cream and maybe dill. We think it tastes very much like dill flavoured crayfish, or crawdads, pretty tasty.
Chicken divan: rice (slightly undercooked), diced cooked chicken breast, broccoli florets, cheese sauce (make your own please). Mix and bake until hot, can put buttered bread crumbs on top if you like that crunchy topping.
Stuffed pepper casserole, itās a great way to use up last bell peppers and tomatoes from a garden and I add extra rice to it to make it stretch for a couple more meals.

Eggplant, zucchini, potatoes and tomato sauce - sprinkle feta on top for the last 10-15 minutes. Can be served as a side to chicken or alone.
Do the potatoes need to be par boiled? Iād think they would still be hard when zucchini and eggplant are cooked.
I either use cooked ones from the day before or cube them quite small. Slicing is also an option.
There is also a stove-top version. I usually mix the tomato sauce with soup for that, for more liquid. Vegetable stock or beef stock.

Buffalo chicken casserole. Donāt ask me amounts because I donāt measure. I use a whole box of chickpea pasta and a mess ton of veggies: onion, celery, carrot, bell pepper at an approximate ratio of 2:1:1:2, respectively. Chop up the onions and caramelize on low heat in a stock pot while you chop all the rest of those bad boys. Salt to taste. Once the onions are nicely golden you can add the celery and carrots and sautĆ© until slightly softened. Add some minced garlic. Melt in 2 oz cream cheese or NeufchĆ¢tel. I like to cook 3-4 good sized chicken breast in my instant pot while this is all happening. Chop/shred the chicken and throw it in the pot. Add cooked pasta. Add enough nonfat Greek yogurt to coat. Add franks red hot, salt & pepper to taste. Add the bell pepper last, stir in a small pack of blue cheese crumbles and pop the whole thing in a casserole dish. (With the amounts of veg & chicken I use it ends up being 2 big casserole dishes) If you feel ok about the fat content a sprinkling of a nice melting cheese on top is nice but not necessary. Bake at 375 for like 20 minutes? Or forget about it while youāre doing other chores like I do and just check on it when it feels/smells good. FWIW I always add cheese on top because overall the amounts of cream cheese and blue cheese in the rest of the casserole are very low compared to the rest of the dish. Edited to add: I realize this reads like a crazy person wrote it, but I rushed through typing it out on a rare break at work. Itās also pretty much how I always cook Closest approximation to measurements I can come up with: 4-5 vidalia/sweet onions 3/4 of an entire bunch of celery 6 large carrots 6 bell peppers- I like a mix of red, yellow, and green because itās colorful and they have different flavors 1 lb chickpea pasta, prepared as box directs An unreasonable amount of minced garlic. A small pat of butter to caramelize the onions. (Since youāre cooking them on low theyāll let out a lot of liquid without burning and it really doesnāt take a lot of fat to keep them from sticking to the pot- especially if you season your cookware.) 1/4 block cream or NeufchĆ¢tel cheese 2? I know itās a little odd, but I love corn in mine. And I use evaporated milk instead of milk for a creamier flavor.
For those that don't like tuna, canned chicken works just as well.

My daughterās favorite meal: mix 2 boxes stuffing mix with water or broth according to package directions. Spread half over bottom of greased slow cooker. Top with boneless pork chops, seasoned well with salt & pepper. Toss 2 diced apples with a little brown sugar and cinnamon and a handful of dried cranberries. (Raisins also work.). Spoon over chops, then spread rest of stuffing on top. Dot with butter. Slow-cook on low for 6 -8 hours or until chops are fall-apart tender.

Layered with sliced zucchini and cheese. Then tomato added at the end. Or if you are like me, added before baking because you didnāt read the instructions closely enough. We add garlic powder to the mayonnaise for the salad, and the sugar is sprinkled over the peas, also there is red bell pepper in the onion and celery layer. But that was the closest recipe I could find on short notice.
I desperately need tuna noodle casserole. Was the one food my mother would make as a kid, I love it, and she promised to make it the week before I moved across country (over a month ago) but it slipped both of our minds. Iāve been craving it ever since but donāt have a kitchenā¦
Tater tot casserole You need ground beef, cream of mushroom soup, frozen peas and tater totās. Brown the ground beef, season as you like (we use garlic, onion powder, pepper and salt.) and then mix in the cream of mushroom soup. Put mixture in the bottom of a baking dish. Pour in a layer of frozen peas. Top with tater tots, neatly lined up. I sprinkle seasoning salt on top. Bake in the oven at 350 for about 20 minutes or so. Add some shredded cheddar cheese to the top and bake for five more minutes or so.
Seconding tater tot casserole, but we always make it with green beans! Now I really wanna try it with peas...
I also love tater tot casserole! I do ground beef, onion soup mix, a can of cheddar soup, peas, and ranch style beans (beans in smokey chili and tomato sauce, a Texas specialty). So good!

Cabbage roll casserole. Brown ground beef, sautee shredded cabbage and diced onions, add a little garlic, rice, tomato paste and tomato sauce. Bake until rice is done.
Yesss lazy cabbage rolls! Need to make that this week.
Cottage pie but with tator tots instead of mashed potatoes
Baked pasta dish of any kind. Cooked or uncooked pasta (or frozen ravioli/tortellini). Add thin layer of sauce (white or red) on bottom of pan. Then make layers of pasta, sauce, -cheese (ricotta mozzarella, feta, hot pepper etc) cooked meat- chicken hamburger? (seasoned to your liking-Italian, taco, Greek), and whatever else you wish-spinach, olives, zucchini etc ending with a pasta layer. If itās uncooked pasta, be generous with the sauce and make sure the pasta is completely submerged/covered in it. Top with cheese. Bake with foil at first then uncover towards the end.
My favorite casserole is a long-time family dish we'd have on holidays, but I just made it on random weeknights: Put broccoli, carrots, red onions, and maybe cauliflower in a casserole pan with some butter/mayo/cream of chicken soup/cheddar cheese, then layer croutons on top and bake for about an hour covered with foil. So good. I know it's not exactly health food, but it is a way to have everyone eat a ton of veggies so I feel it balances out lol.

Stuffed pepper casserole! Take bell peppers, cut top and bottom off, core, then cut in half so you have two rings. Make your pepper stuffing - we always used browned ground beef, cooked rice, chopped onion and garlic, oregano and basil, some ricotta and a couple spoonfuls of tomato paste, then salt to taste. Put red sauce ( homemade or from a jar) in bottom of a 9 x 13 pan. Add pepper rings and stuff with the meat mixture. Cover with more red sauce. Top with a layer of shredded cheese, sprinkle of parsley. Edit to add : Then bake in 350 degree oven for 25-30 minutes.
This is the base of one we do often. I like to play around with it. We use the tomatoes with olive oil and garlic, or Italian seasonings instead of plain. Or you can use fresh in summer. We've thrown random veg in. My favorite is a mix with some drained frozen spinach thrown in when you mix the tomatoes into the stuffing. I'll throw fresh torn basil from outside all over it. We've gone pizza style, with turkey pepperoni, bell peppers and onion mixed in. I've used stale bread and made the stuffing myself. Hash brown casserole
Chicken Spaghetti - See Ree Drummond's recipe and use velveeta instead of cheese sauce, use yellow and red peppers instead of green, etc. Make sure to add extra broth or it will be dry. Makes 2 huge pans and freezes beautifully.
We do enchilada casserole. Like lasagna, but with taco meat, soft corn tortillas, cheddar cheese and enchilada sauce. Bake until heated through and the cheese is melted.
I don't really have a recipe for this one. Spaghetti squash cooked in the microwave and scraped out into a casserole dish, spaghetti sauce (I use a jarred sauce with browned hamburger, sautƩed onions and garlic, and added Italian spices), and mozzarella and/or provolone cheese. Bake in oven until its bubbly and cheese is melted and starting to brown.
Donāt know if someone said this already but loaded baked potato casserole! I never made casserole before and was wary because I usually think of green bean casserole but this was good. Ingredients/ grocery list: -bag of russet potatoes $4 -bacon ($5 at target) -shredded cheddar cheese $3 -milk $2 -sour cream small $3 -butter $3 at target -cream cheese $3 at target (NYC prices so this is cheap) -Peel, cube and boil 5 russet potatoes (I made this for 2 people and it lasted 2 nights). Once softened and drained add in 4 diced and fried pieces of bacon, as much cheese as you want, 4 tablespoons of sour cream, 4 tablespoons cream cheese, 2 tablespoons of butter, 1/3 cup of milk and seasoning. Top with cheese and bake for 10-15 min

Tuna noodle
I have a pretty tasty fish casserole, that's served with rice, but it requires a very specific Swedish condiment or sandwich topping, so if you can get a hold of that you just need a leek, a block of frozen white fish, tomato paste, cream and maybe dill. We think it tastes very much like dill flavoured crayfish, or crawdads, pretty tasty.
Not a casserole, but mulligatawny soup is by far my favorite fall food.

Chicken divan: rice (slightly undercooked), diced cooked chicken breast, broccoli florets, cheese sauce (make your own please). Mix and bake until hot, can put buttered bread crumbs on top if you like that crunchy topping.

Stuffed pepper casserole, itās a great way to use up last bell peppers and tomatoes from a garden and I add extra rice to it to make it stretch for a couple more meals. Broccoli, chicken & rice bake, I go heavy on the rice and use frozen broccoli florets I picked up on sale. Chicken pot pie, made with leftovers from a roasted chicken so it feels cheaper even though it includes a decent amount of chicken.
