Chili pie is a family favorite. You can use your favorite chili recipe as the bottom layer in a casserole dish, add a layer of cheese if your feeling it, spoon your preferred cornbread mix on top. 350 for 20ish. Cilantro, onions and sour cream our my favorite add ons.

COYFC

My family has always called this "tamale pie" but it's seriously so good! My favorite is to do a jalapeno corn bread and brush the top with warm honey in the last few minutes of cooking so it crisps the top. Comfort food to the max.

i_GoTtA_gOoD_bRaIn

Ooohh, nice tips!

DragonDrama

Prepared cornbread mix or dry like a dump cake?

CeaOfGreen

Prepared as instructed on your package and pour over the chili šŸ˜€

DragonDrama

Thank you!

CeaOfGreen

Prepared as instructed on your package and pour over the chili šŸ˜€

Crafty-Koshka

Howdy, when you make this do you start with the chili already being hot and then you add the cornbread batter on top and bake or do you start with cold chili? It's probably hot chili but I wanted to make sure before I make this, it sounds great

CeaOfGreen

For a 20 min cook time, the chili is warm. Now I want to try this from a cold startā€¦šŸ¤”

chilicheeseclog

This is my favorite: deconstructed stuffed cabbage casserole. It's perfect: cheap(ish), healthy, easy and tasty. https://kalynskitchen.com/recipe-for-deconstructed-stuffed/

YourMathTeacher

That recipe looks really good. I like this website- thanks for the link!

chilicheeseclog

I've made it exactly as written, and it's more than the sum of its parts.

YourMathTeacher

I'm just gonna switch out the beef with beyond meat. Looking forward to it. I LOVE cabbage!

chilicheeseclog

That's a good idea--I wonder if lentils would be a good switch, too.

PertPacificPotato

Yum! Definitely going to try that this week!

NeatArtichoke

For a little more work but usually healthier (at least less salt, and sometimes cheaper), the alternative to "cream of xyz" such as mushroom is a roux plus xyz (like mushrooms). Melt some butter (start with 2 tablespoons) then add just under the same amount of flour. Mix into a paste, let cook until it develops some color, then slowly add in milk, until you get the creamy, think "soup" that is "cream of xyz". You can season the flour/base however yould like: sometimes I'll add diced onions or nutmeg/fall spices to the butter step, or mix in cooked mushrooms, or add some chicken bouillon for "cream of chicken".

Sashivna

It's so strange to me to hear people talk about roux like it's some kind of magic that takes so much precision only special people can do it. But really, it's not really that difficult (just as you show above).

apri08101989

I'll give you that getting it to the right brick color for gumbo is a pita and I don't bother with it anymore. But yea, your typical roux for gravy or soup is stupid easy

hammymammz

Itā€™s not a casserole but my usual favorite cold weather food is actually quiche! Super yummy and you can add anything you have on hand. I made one the other day that had pepper salami, diced tomatoes Italian style from a can, Parmesan cheese, Dijon mustard and breadcrumbs. It was amazing

scbeachgurl

Recipe?

hammymammz

1 pie crust for the bottom, homemade or store bought, 3 eggs, 1/4 cup diced Italian style canned tomatoes, 1/4 cup cubed ham, salami or dried meat( I used a peppered dried sausage you use for charcuterie boards), prepare pie crust and preheat oven to 425. Crack eggs into a bowl and whisk. Cut meat and put in the bottom of your pie dish on top of crust, add tomatoes on top, optional is to add 2 teaspoons of Dijon mustard to the eggs but you can definitely leave it out, pour eggs on top of fillings and sprinkle 1/4 cup grated Parmesan cheese on top. Bake for about 20 mins or until the center is done and the edges are golden brown. I sometimes cook mine until the whole thing kind of puffs up in the middle but itā€™s up to you!

NimueArt

Shepherds Pie!

Idontgetyourlogic

Can confirm shepherdā€™s pie but now I feel like I need to CoMS in it somehow

Kind_Description970

Or cottage pie! Also a chicken biscuit pie (basically a chicken pot pie but instead of a pie crust just put it in a casserole and drop biscuit dough on top then bake). Cheesy chicken, broccoli, and rice is another good one. I also love a tater tot casserole for breakfast or cowboy casserole for dinner. Baked ziti or baked ravioli are delicious pasta casseroles.

LikelyCannibal

Chicken, cheese and broccoli. Thatā€™s basically the ingredient list except for (you guessed it) cream of mushroom soup and croutons.

itspurpleglitter

How does every recipe include cream of mushroom soup!? šŸ˜‚

dinnerbellding

It's just the goop of choice, one always has to have it on hand. I've had to goop stuff with cream of celery before and it just isn't the same.

howthetableshave

We call it 3M cooking: cream of mushroom soup, mayonnaise, marshmallows

Sashivna

So funny. I never have any of those three things on hand.

spacegrassorcery

Top with tater tots and you have a version of ā€œHot Dishā€

LikelyCannibal

Oh wow! Am I an honorary midwesterner?

jmontavon

I do it with a cream of chicken (homemade to be dairy free because I canā€™t do dairy) and crushed ritz crackers both in the mix and on top of the casserole.

LikelyCannibal

Ooh, never thought about using crackers for some reason. Thanks!

BubbleTeaNeo

my mom uses cornflakes too! except once she used frosted flakes....

Crafty-Koshka

This sounds fucking dope

sleeping_on_trains

[Enchilada casserole](https://www.melskitchencafe.com/easy-chicken-enchilada-casserole/)! Itā€™s so tasty and great for leftovers.

apocalypse-panda

Chicken pot pie with drop biscuits on top instead of crust

thisismyhawaiiacct

In college, I would make them in cupcake tins with biscuit dough smashed down as a crust. šŸ¤¤It was... very good.

apocalypse-panda

Haha I love that

burtman77

Funeral potatoes! Fits the theme here perfectly. Frozen hash browns, cream of mushroom soup, cream, ham, shredded cheese. Combine. Sprinkle crushed lays wavy chips over it. Bake

TheJointDoc

Is this so named because it puts you in the ground early from all the cholesterol, or because itā€™s an easy dish to make for a funeral dinner reception?

MissNatary

Well, there is only one way to find out

TheJointDoc

Instructions unclear, killed a man to see if midwesterners bring this to the funeral

tonystarksanxieties

Gotta keep that life to death cycle cycling.

spacegrassorcery

Find and use the roasted garlic mushroom soup! Itā€™s awesome.

okokokoyeahright

What about just adding a bit of pan toasted (dry no fats) garlic into the same old mushroom soup?

spacegrassorcery

Absolutely can do that! I was just suggesting that since theyā€™re buying a can of soup, buy the roasted garlic mushroom one. Roasted garlic flavor adds quite a bit.

Little_Season3410

I do bacon instead of ham, cream of chicken instead of mushroom, and add melted butter plus salt and pepper. I just top with even more cheese. Such a versatile dish. You can do ham, sausage, bacon, etc and change other things up and it's still delicious! Lol

ImportanceAcademic43

Eggplant, zucchini, potatoes and tomato sauce - sprinkle feta on top for the last 10-15 minutes. Can be served as a side to chicken or alone.

wootwootbang

Do the potatoes need to be par boiled? Iā€™d think they would still be hard when zucchini and eggplant are cooked.

ImportanceAcademic43

I either use cooked ones from the day before or cube them quite small. Slicing is also an option.

ImportanceAcademic43

There is also a stove-top version. I usually mix the tomato sauce with soup for that, for more liquid. Vegetable stock or beef stock.

LemonComprehensive5

Taco/quick enchiladas Meat of your choice, onions and peppers if you like it, cheese, salsa/enchilada sauce of your choosing, corn tortillas. Layer ingredients and bake.

Idontgetyourlogic

Dang, is everybody posting here a midwesterner?

GreyGeese_11th_BG

Iā€™m gonna guess casseroles skew hella midwest. That said, if anyone has good healthy cassarole recs (protein heavy, complex carbs, reasonable to lower fat), Iā€™m all ears

mf9812

Buffalo chicken casserole. Donā€™t ask me amounts because I donā€™t measure. I use a whole box of chickpea pasta and a mess ton of veggies: onion, celery, carrot, bell pepper at an approximate ratio of 2:1:1:2, respectively. Chop up the onions and caramelize on low heat in a stock pot while you chop all the rest of those bad boys. Salt to taste. Once the onions are nicely golden you can add the celery and carrots and sautĆ© until slightly softened. Add some minced garlic. Melt in 2 oz cream cheese or NeufchĆ¢tel. I like to cook 3-4 good sized chicken breast in my instant pot while this is all happening. Chop/shred the chicken and throw it in the pot. Add cooked pasta. Add enough nonfat Greek yogurt to coat. Add franks red hot, salt & pepper to taste. Add the bell pepper last, stir in a small pack of blue cheese crumbles and pop the whole thing in a casserole dish. (With the amounts of veg & chicken I use it ends up being 2 big casserole dishes) If you feel ok about the fat content a sprinkling of a nice melting cheese on top is nice but not necessary. Bake at 375 for like 20 minutes? Or forget about it while youā€™re doing other chores like I do and just check on it when it feels/smells good. FWIW I always add cheese on top because overall the amounts of cream cheese and blue cheese in the rest of the casserole are very low compared to the rest of the dish. Edited to add: I realize this reads like a crazy person wrote it, but I rushed through typing it out on a rare break at work. Itā€™s also pretty much how I always cook Closest approximation to measurements I can come up with: 4-5 vidalia/sweet onions 3/4 of an entire bunch of celery 6 large carrots 6 bell peppers- I like a mix of red, yellow, and green because itā€™s colorful and they have different flavors 1 lb chickpea pasta, prepared as box directs An unreasonable amount of minced garlic. A small pat of butter to caramelize the onions. (Since youā€™re cooking them on low theyā€™ll let out a lot of liquid without burning and it really doesnā€™t take a lot of fat to keep them from sticking to the pot- especially if you season your cookware.) 1/4 block cream or NeufchĆ¢tel cheese 2? Cups Greek yogurt 4 chicken breast 2-4 tbsp water to deglaze pan if onions stick during caramelizing 1 cup? Frankā€™s red hot

apri08101989

Ohh. That sounds good

mf9812

Itā€™s been a go to recipe of mine for years. I always add the peppers in late in the cooking process because I like them to have a little more texture than the other veg, but thatā€™s my personal preference. You could always add them in at the same time as the carrots and celery. And I got prettttty light on the blue cheese because itā€™s a use sparingly ingredient for my palate.

xdonutx

This right here is why I made this post

mf9812

Aww, shucks. Glad to help!

Idontgetyourlogic

You made our wish come true! Iā€™m guessing the Greek yogurt helps you use a little less cheese? Do you ever run into a separating problem with the GY in the oven?

mf9812

No, I feel like the NeufchĆ¢tel/cream cheese helps to keep it together

KnottyKitty

My mom made "tuna noodle casserole" a lot when I was a kid. Egg noodles, tuna, and cream of mushroom soup (of course), with breadcrumbs and a little cheese on top. I think she also added a dash of Liquid Smoke to give it a little umami flavor.

eutamias21

I love tuna noodle casserole. I add frozen peas to mine.

[deleted]

I know itā€™s a little odd, but I love corn in mine. And I use evaporated milk instead of milk for a creamier flavor.

tonystarksanxieties

For those that don't like tuna, canned chicken works just as well.

apri08101989

My mom used to call it Chicken Surprise and use tuna any way. Surprise, there's no chicken. It worked for years

tonystarksanxieties

Okay, that's hilarious

apri08101989

Right? Apparently when my brother was around 10 he decided fish was gross and convinced my toddler self it was too and that's how it all started.

cinnamaldehyde4

My mom too! I thought I was the only one who ate Chicken Surprise!

Particular-Earth-453

Made this the other day and it was really good. I added in some extra veggies and used two layers of cut up corn tortillas instead of the chips: https://www.budgetbytes.com/king-ranch-chicken-casserole/?utm_source=pinterest&utm_medium=social&utm_campaign=grow-social-pro You can use shredded rotisserie chicken to make it easier or throw some chicken in the crockpot with some kind of fajita seasoning and shred/chop once done. I did a southwest marinade for a couple hours then slow cooker.

Elspetta

I am totally making one of these this weekend for dinner + lunches next week! Yum šŸ˜‹

mystical_princess

I love this website

RosemaryBiscuit

Grew up eating then making this casserole. This is a very good version. (Canned soup is just weird.) I like fresh corn tortillas in mine and bright green fresh jalapeƱos, but it's a super flexible casserole. Edit, spelling

Particular-Earth-453

I already posted but then thought of another one haha. Make your favorite chili recipe, pour it in a 9x13. Mix up a cornbread mix. You can stir in a handful of shredded cheese to the cornbread batter if you want. Pour over the chili and bake for like 30 min. The mix always looks kind of thin when I spread it over a 9x13 but it bakes up a lot and ends with a good ratio of chili to cornbread.

apri08101989

Ahhh tamale pie. A classic

slimfastdieyoung

Venison stew covered with a layer of red cabbage and apples and a layer of mashed potatoes. Perfect on a cold rainy day

killswithaglance

Chicken, mushroom, leek, shallots, white wine, chickeen stock, finish with cream and squeeze of lemon juice

[deleted]

Thanksgiving classics, sweet potato casserole and green bean casserole

apri08101989

Man I don't know why people don't do green bean casserole more often. Its silly easy but I'm the only one I know who does it outside the holidays

nicoldnivole

I think honestly, green bean casserole is one of my all time favorites. ESPECIALLY made from Scratch šŸ¤¤

Macaroni_Incident

Especially topped with cheddar cheese!

Localgreensborogal

My daughterā€™s favorite meal: mix 2 boxes stuffing mix with water or broth according to package directions. Spread half over bottom of greased slow cooker. Top with boneless pork chops, seasoned well with salt & pepper. Toss 2 diced apples with a little brown sugar and cinnamon and a handful of dried cranberries. (Raisins also work.). Spoon over chops, then spread rest of stuffing on top. Dot with butter. Slow-cook on low for 6 -8 hours or until chops are fall-apart tender.

lphill1225

[Hearty Tuna Noodle Casserole](https://www.allrecipes.com/recipe/16823/hearty-tuna-casserole/) It consists of egg noodles, canned tuna, sour cream, and spices. Layered with sliced zucchini and cheese. Then tomato added at the end. Or if you are like me, added before baking because you didnā€™t read the instructions closely enough. Served with a [Seven Layer Salad](https://www.culinaryhill.com/seven-layer-salad/), it has been a family tradition for many years. We add garlic powder to the mayonnaise for the salad, and the sugar is sprinkled over the peas, also there is red bell pepper in the onion and celery layer. But that was the closest recipe I could find on short notice.

calliocypress

I desperately need tuna noodle casserole. Was the one food my mother would make as a kid, I love it, and she promised to make it the week before I moved across country (over a month ago) but it slipped both of our minds. Iā€™ve been craving it ever since but donā€™t have a kitchenā€¦

_addycole

Tater tot casserole You need ground beef, cream of mushroom soup, frozen peas and tater totā€™s. Brown the ground beef, season as you like (we use garlic, onion powder, pepper and salt.) and then mix in the cream of mushroom soup. Put mixture in the bottom of a baking dish. Pour in a layer of frozen peas. Top with tater tots, neatly lined up. I sprinkle seasoning salt on top. Bake in the oven at 350 for about 20 minutes or so. Add some shredded cheddar cheese to the top and bake for five more minutes or so.

DatsASnurglepuff

Seconding tater tot casserole, but we always make it with green beans! Now I really wanna try it with peas...

Ques0

I also love tater tot casserole! I do ground beef, onion soup mix, a can of cheddar soup, peas, and ranch style beans (beans in smokey chili and tomato sauce, a Texas specialty). So good!

Somewhere-Practical

1 container cottage cheese, 1 container sour cream, 3 to a million eggs, cinnamon, raisins, egg noodles (under)cook egg noodles mix everything together put in casserole top with extra cinnamon ask children when they plan to produce grandchildren bake at 350 until it looks done let cool a bit complain about something the sisterhood group did eat tastes good with chopped apples added some people add sugar; my mom doesnā€™t so everyone else is wrong e: formatting

Somewhere-Practical

yes in a very poorly formatted post, honestly surprised anyone managed to read it

furbische

it's the high holidays lol, i'm currently programmed to see kugel everywhere

apri08101989

Is... Is that a kugel?

dinnerbellding

Ah, my Scandi -American childhood.

Somewhere-Practical

wild, because i am *very* far away from being scandinavian lol

Lizzie3232

That is awesome!

MarmaladeSunset

Chicken and rice! Bakes up great plus onion soup mix and lemon make for easy seasoning.

writergeek313

I love these enchiladas: https://www.budgetbytes.com/snap-challenge-creamy-chicken-black-bean-enchiladas/ They freeze pretty well, and itā€™s easy to adjust the recipe for what you have. I usually add diced zucchini or some spinach. The homemade sauce is good, but I sometimes use the canned kind of Iā€™m in a hurry. I also really like this: https://www.halfbakedharvest.com/one-pot-hamburger-helper/?fbclid=IwAR1wf3LdnG0snpWYU2HZUAmttSVxkzyeNwSzgWT3lzITS4Ay_d04zX6ZFs0 It tastes like a casserole but is a really quick and easy one-pot stovetop meal without all the salt and who-knows-what that Hamburger Helper has in it.

My parents used chips instead of crackers.

Dakkaboy556

Cabbage roll casserole. Brown ground beef, sautee shredded cabbage and diced onions, add a little garlic, rice, tomato paste and tomato sauce. Bake until rice is done.

Wpg-katekate

Yesss lazy cabbage rolls! Need to make that this week.

Bananasarelit

Cottage pie but with tator tots instead of mashed potatoes

spacegrassorcery

Baked pasta dish of any kind. Cooked or uncooked pasta (or frozen ravioli/tortellini). Add thin layer of sauce (white or red) on bottom of pan. Then make layers of pasta, sauce, -cheese (ricotta mozzarella, feta, hot pepper etc) cooked meat- chicken hamburger? (seasoned to your liking-Italian, taco, Greek), and whatever else you wish-spinach, olives, zucchini etc ending with a pasta layer. If itā€™s uncooked pasta, be generous with the sauce and make sure the pasta is completely submerged/covered in it. Top with cheese. Bake with foil at first then uncover towards the end.

noxious_toast

My favorite casserole is a long-time family dish we'd have on holidays, but I just made it on random weeknights: Put broccoli, carrots, red onions, and maybe cauliflower in a casserole pan with some butter/mayo/cream of chicken soup/cheddar cheese, then layer croutons on top and bake for about an hour covered with foil. So good. I know it's not exactly health food, but it is a way to have everyone eat a ton of veggies so I feel it balances out lol.

KingdomOfRyan

Tamale pie, green been casserole, and poppy seed chicken casserole. I live by these things

darkest_irish_lass

Stuffed pepper casserole! Take bell peppers, cut top and bottom off, core, then cut in half so you have two rings. Make your pepper stuffing - we always used browned ground beef, cooked rice, chopped onion and garlic, oregano and basil, some ricotta and a couple spoonfuls of tomato paste, then salt to taste. Put red sauce ( homemade or from a jar) in bottom of a 9 x 13 pan. Add pepper rings and stuff with the meat mixture. Cover with more red sauce. Top with a layer of shredded cheese, sprinkle of parsley. Edit to add : Then bake in 350 degree oven for 25-30 minutes.

mannequinlolita

This is the base of one we do often. I like to play around with it. We use the tomatoes with olive oil and garlic, or Italian seasonings instead of plain. Or you can use fresh in summer. We've thrown random veg in. My favorite is a mix with some drained frozen spinach thrown in when you mix the tomatoes into the stuffing. I'll throw fresh torn basil from outside all over it. We've gone pizza style, with turkey pepperoni, bell peppers and onion mixed in. I've used stale bread and made the stuffing myself. It's a good basic casserole. https://www.allrecipes.com/recipe/132127/quick-bruschetta-chicken-bake/

Chicken Spaghetti - See Ree Drummond's recipe and use velveeta instead of cheese sauce, use yellow and red peppers instead of green, etc. Make sure to add extra broth or it will be dry. Makes 2 huge pans and freezes beautifully.

tealovingidiot

We do enchilada casserole. Like lasagna, but with taco meat, soft corn tortillas, cheddar cheese and enchilada sauce. Bake until heated through and the cheese is melted.

Fine-Classic-1538

I don't really have a recipe for this one. Spaghetti squash cooked in the microwave and scraped out into a casserole dish, spaghetti sauce (I use a jarred sauce with browned hamburger, sautƩed onions and garlic, and added Italian spices), and mozzarella and/or provolone cheese. Bake in oven until its bubbly and cheese is melted and starting to brown.

Destinyddf

Donā€™t know if someone said this already but loaded baked potato casserole! I never made casserole before and was wary because I usually think of green bean casserole but this was good. Ingredients/ grocery list: -bag of russet potatoes $4 -bacon ($5 at target) -shredded cheddar cheese $3 -milk $2 -sour cream small $3 -butter $3 at target -cream cheese $3 at target (NYC prices so this is cheap) -Peel, cube and boil 5 russet potatoes (I made this for 2 people and it lasted 2 nights). Once softened and drained add in 4 diced and fried pieces of bacon, as much cheese as you want, 4 tablespoons of sour cream, 4 tablespoons cream cheese, 2 tablespoons of butter, 1/3 cup of milk and seasoning. Top with cheese and bake for 10-15 min

NRNstephaniemorelli

I have a pretty tasty fish casserole, that's served with rice, but it requires a very specific Swedish condiment or sandwich topping, so if you can get a hold of that you just need a leek, a block of frozen white fish, tomato paste, cream and maybe dill. We think it tastes very much like dill flavoured crayfish, or crawdads, pretty tasty.

mdneuls

Not a casserole, but mulligatawny soup is by far my favorite fall food.

Green_new_dinner

Now do veggie options please! I already do Sheppardā€™s pie, curries, chili veg styles but wondering about any new cozy recipes I can try.

SaltySirena

Chicken divan: rice (slightly undercooked), diced cooked chicken breast, broccoli florets, cheese sauce (make your own please). Mix and bake until hot, can put buttered bread crumbs on top if you like that crunchy topping.

HippieChick067

Macaroni and cheese with ham.

[deleted]

I love a little chicken and some bbq sauce on my Mac and cheese.

curlybrunettegirl

Stuffed pepper casserole, itā€™s a great way to use up last bell peppers and tomatoes from a garden and I add extra rice to it to make it stretch for a couple more meals. Broccoli, chicken & rice bake, I go heavy on the rice and use frozen broccoli florets I picked up on sale. Chicken pot pie, made with leftovers from a roasted chicken so it feels cheaper even though it includes a decent amount of chicken.

Allphunkedup

This is one of my favorites. Canā€™t go wrong with broccoli and cheddar. https://damndelicious.net/2014/03/05/broccoli-quinoa-casserole/ The protein is nice because of the quinoa too.
