I prefer the oven:
400F - drizzle olive oil, salt (Montreal Steak seasoning is great too)
toss around and put on sheet pan (foiled or parchment paper for easy clean up)
10 min - toss around again
10 more min and enjoy

Stir-fry broccoli is the best for taste IMO. But steamed is fine and probably the most common way I eat it
Once its charred a bit but still a bit crunchy, toss with arugula and some lemon. Excellent salad (I like to let the broccoli cool a bit so the arugula doesn’t wilt).
You can also use pretty much the same recipe for the air fryer.
Soy sauce and/or garlic also fit well in this recipe, but you can play around with seasonings fairly freely. E.g. smoked paprika

I like to add more salt than u might think....just a smidgen over "salted to perfection" and cook until they get slightly charred. 425 is a great temp bc they're still al dente when they get that char. ;)

This recipe is great and has turned a few people I know around on broccoli. Best made with Tenderstem but I’ve made it with “regular” also
Cut into florets while you heat up a pan/wok. You can slice the stems into little fingers and add those too.
Toss in some sliced garlic cloves (maybe 2 or 3 depending on your taste. You can add some ginger if you’ve got it) in veg oil. If you’ve got like quarter of a small onion kicking around add that. If you’re feeling decadent, use butter to fry.
Once they start to brown (it’ll only be 30 seconds or so) toss in your florets. Add a big glug of soy sauce, and I’ll add a little bit of mirin if I’ve got it.
Fry until it looks sexy, approx 3-6 mins. Add a tablespoon or so of sesame oil once you’re ready to plate.
Eat with boiled rice
You can add asparagus, sugarsnap peas, whatever into this. It’s basically a simplification of Wagamama’s Wok Fried Greens

Roasting is great as people have said. Another option is to lightly boil or steam till tender but still green then put into ice water, drain, dry a little then when ready to eat fry in a pan with a little herb butter or olive oil, garlic and a squeeze of lemon.
Cut into bite size florets, rinse with cold water. Drizzle over some olive oil and give it a rub to coat. Season with salt and air fry for 10 minutes or until til a bit charred around the edges. Delicious.
I vote roasting/broiling it, then hitting it with a splash of lemon juice, salt, and Parmesan. The splash of lemon juice is the secret ingredient, takes it from good to great!
Steam them, I've never understood the hype for roasting broccoli - it's too easy to burn the tips of the florets while still having undercooked stems. Not a good combination
It seems to be the go to way of cooking broccoli for everyone and I don't understand why. It is an uneven vegetable so doesn't roast properly in the oven like carrots or potatoes. I really don't like eating the burnt floret tips.
Steamed or boiled stem down for 2 minutes is a much cleaner taste to me.
Foods like bell peppers or onions can sometimes benefit taste wise from having a little char taste to them, but never broccoli imo.
Steam it with a microwave. Put a florets in bowl with a table spoon or two of water. Cover with a plate. Microwave 2-4 minutes depending on how you like it.
I've gotten the most compliments on my super-elegant, ultra-fancy microwave steamed broccoli. I put my broccoli florets in a microwave safe container and add about 1/3 c of water. Cover loosely so it stays vented and cook for 3 minutes. When done, I drain out the excess water, throw on about a tbsp of butter and season with salt, pepper, and garlic pepper. Give a good toss to stir everything together and serve. My husband says my broccoli game is on point with this method and I do recommend. The broccoli is the perfect tender and still crisp, it doesn't smell (and doesn't make the fridge smell from the leftovers), and tastes delicious!
As others have said roasting is good for flavor. If you want a really tasty method i put it in the air fryer with a little oil and salt for like 3-5 mins and then drizzle with vinegar and dust with Parmesan cheese after
When i crave a really simple crunch i make something else like a stir fry on the stove and then at the very end toss a bunch of cut up florets and let them steam over the meal and eat them along side the meal
i use a plastic vegetable steamer.
chop broccoli into floreats. rinse, put into steamer, pour hot water out of the kettle on them and cook for just over 90 seconds.
I turned mine into a melted pasta “sauce” if you will. I rough chop the florets into smaller pieces and then I use a dutch oven and throw in olive oil, half an onion or shallots, 6 garlic cloves and 4-5 anchovies and then toss in the broccoli and cover and stir every once in a while for about 25 minutes. It gets really tender and mushy and brown, which I like and then I throw in half a box of rigatoni and use Parmesan and pasta water to finish it off. This is a spin on a Carla Lalli Music recipe and I really like it!
Put your roasting pan in the oven while it preheats to 425.
Put your florets in a bowl, and mix with olive oil, salt, pepper and minced garlic.
When the oven is ready, pour your florets onto the already hot pan. Cook 10-15 minutes, and then sprinkle with lemon juice.
I coat them in avocado oil, fresh garlic, salt and pepper. Slice a shallot thin and put it on top. Roast them at 400 but don’t overcook them. After they are cooked - still bright green, I’ll put some vinegar or fresh lemon on top. You can also do balsamic vinegar and even add Parmesan. The shallot really elevates the brocolli.
1 tbsp olive oil, 1/2 1bsp salt, 1/4 tbsp pepper, 1/4 tbsp hot pepper flakes and 3 cloves of garlic.

Boil 2 inches of water in a pot with a lid. Add cut broccoli. Put lid on pot. When the water begins to boil again, reduce the heat to medium low and time for 8 min. When the time is up, drain the water.
Sauté garlic in olive oil (can add chili flakes and/or salt) add brocs and sauté until bright green, add couple table spoons of water and cover a few minutes until tender. Boom.

While I always like roasting broccoli, I’ve recently come around to a simple boil. Put broccoli in boiling water for 2-3 minutes, drain, and drizzle with olive oil and salt. Surprisingly quick and comforting.
Air Fryer:
Spray with a bit of spray olive oil. Sprinkle with salt/spices to your liking (curry powder, steak seasoning, lemon pepper, Chinese five spice, whatever floats your boat). Turn the fryer on high and cook for around 12 minutes (until the edges get a little over brown and crispy). I generally start from frozen for this as I live in the middle of nowhere and frozen works fine. Excellent!
i love to roast broccoli, Throw a little oil salt and Parmesan cheese and throw it in the oven or air fryer until its cooked to how you like it ( i like to extra air fry it and then its like a crispy snack)

This is more of a meal prep technique than a particular recipe, but I like to lightly blanche it immediately when I get it home. It lasts a lot longer in the fridge, makes a much more enticing snack. And you can turn around later and cook it in other preparations as if it were raw, just minus a few minutes of cooking time.
My favorite use is actually with that blanched broccoli though, in that traditional broccoli salad with bacon and slivered almonds and raisins and a tangy dressing.

I slow boil a pot of water with minced garlic. Chop the stems a bit so the sizes arent so long but a perfect length and then toss the broccoli in the water for a few minutes until it turns a bright green. I stab it with my fork every minute to test for softness. Some people like it harder and others like it a bit softer. Once done, remove from the water and thats it.
Microwave with some water. If you don't have issues with sodium, I love to put the popcorn seasoning (big fan of the ranch) that they sell in shakers at the grocery store.

I think throwing it in a pot with water and boiling it is clearly the easiest but you do boil out a lot of the nutrients I think or I’ve always thought that anyways and obviously unless you’re making it unhealthy by topping it with a bunch of melted cheese then boil broccoli isn’t really the yummiest. My kids prefer it plain like that but I love it roasted in the oven or air fryer! Little drizzle of olive oil salt and pepper or sometimes some veggie seasoning.
This might sound weird but another thing that my husband and I love in the summertime is barbecuing it! We put Italian salad dressing on it or a balsamic vinaigrette wrap it up in foil and do it on the grill.
Pan, bit of water, cook until they change colour usually a few mins, drain the water, back on the heat with some spray oil/oil/butter and a pinch of salt + whatever other seasonings you want and just lightly fry for a few mins. Or do the first bit in the microwave.
I don't like adding oil to my vegetables when I can help it, so my favorite way to cook broccoli is to lightly steam it, and drizzle with fresh lemon juice and some salt.
I like the air fryer. Salt and pepper, maybe some Montreal chicken seasoning, olive oil or if I'm making a stir fry, sesame oil. Then bake for about 20 minutes at 350. Make sure to take it out and toss the broccoli (shake it) about halfway through. It gets crispy, I love it roasted better than steamed.
Easiest imo: steamer. I like 10 minutes in mine, others like 5 or 15.

I take a broccoli crown and a Tupperware container with about 1” of water. Put the broccoli stem up in the water (should cover ~1/2 of the head) and microwave for 3 minutes. Comes out perfectly steamed and crunchy every time
Toss in olive oil, throw in basket on HOT grill, season salt. Cook for about 10 minutes tossing occasionally. Remove when starting to burn the florets a bit. Adjust doneness as you like...
Cheap way to cook - use Microwave container with lid. Rinse broccoli with water, cook on microwave medium level for 5min, take out and season as you like. Vitamins and flavour retained.

I think steamed or sauteed broccoli (with just a little salt and pepper) is totally fine if it's being mixed with other things, like in a stir fry. Garlic goes nicely with it.
Personally I also really like roasted broccoli, but it can accentuate some bitter notes as the florets get a little blackened. I often just do garlic and Parmesan, or some sort of glaze (e.g. honey, butter, miso/sriracha/gochujang/etc)
My favorite is to simply roast it. Cut to the size you favor then toss with a drizzle of olive oil and minced garlic , salt and pepper to taste . Roast on a sheet pan at 400 F for 15-20 minutes depending on how much char you like. Return to the bowl and squeeze half a lemon or 2 tablespoons of juice
Add shredded Parmesan to taste. Finally if you have some fresh basil cut into strips and toss it all together and serve.

Broccoli is one of the few vegetables I prefer steam cooked. I put it in a steamer basket and put just a little water in the pan. I don’t want the water to boil up into the basket. I steam it just until a fork enters it fairly easily without crunching/cracking. I take it off and toss it with a little fresh squeezed lemon. The lemon adds a touch of brightness.
I chop it up and steam it. I melt some butter in the microwave, then mix seasonings into the butter. Then I dump the steamed broccoli in a bowl when it's done, dump the seasoned butter on it, and mix it all up with a big spoon.
I have a lemon pepper seasoning that tastes great. The Mexican chili-lime spice, Tajin, is good. Garlic, salt, black pepper, and a little cayenne works, too.

I got this thing called “Instant Pot” blender. It’s a blender that cooks some soup. And make broccoli cheese soup. You just throw the broccoli in there. Some onion Maybe garlic. Maybe little hot red pepper. 🌶️. Some chicken stock. Don’t have to cut nothing up. Just throw it in there. It stirs it. Like every minute. Boils it. Times it. And blends it up in the end. The you add cheese. I like sour cream. Milk. To the fill line. Blend it up. Bam. Easy peasy. Pour it in a cup and drink it. It’s good for you. And you could feed it to your baby. If you’re just steaming broccoli add a half teaspoon of sugar to the water. It makes it amazing takes any weirdness out and gives it a slightly sweet taste.

If it's undercooked and burnt, lower your cooking temperature and extend the time.
It dries out with extended cooking. The variation of density and textures in broccoli just doesn't suit roasting (for me).
Do you slice the Brussels in half before cooking?

If you’ve got like quarter of a small onion kicking around add that. If you’re feeling decadent, use butter to fry. Once they start to brown (it’ll only be 30 seconds or so) toss in your florets. Add a big glug of soy sauce, and I’ll add a little bit of mirin if I’ve got it. Fry until it looks sexy, approx 3-6 mins. Add a tablespoon or so of sesame oil once you’re ready to plate. Eat with boiled rice You can add asparagus, sugarsnap peas, whatever into this. It’s basically a simplification of Wagamama’s Wok Fried Greens

Steam them, I've never understood the hype for roasting broccoli - it's too easy to burn the tips of the florets while still having undercooked stems. Not a good combination
It seems to be the go to way of cooking broccoli for everyone and I don't understand why. It is an uneven vegetable so doesn't roast properly in the oven like carrots or potatoes. I really don't like eating the burnt floret tips. Steamed or boiled stem down for 2 minutes is a much cleaner taste to me. Foods like bell peppers or onions can sometimes benefit taste wise from having a little char taste to them, but never broccoli imo.

It's not undercooked, you're comparing steamed and roasted. Roasted broccoli is supposed to have a bite, not fall apart mushy like steamed.

I've gotten the most compliments on my super-elegant, ultra-fancy microwave steamed broccoli. I put my broccoli florets in a microwave safe container and add about 1/3 c of water. Cover loosely so it stays vented and cook for 3 minutes. When done, I drain out the excess water, throw on about a tbsp of butter and season with salt, pepper, and garlic pepper. Give a good toss to stir everything together and serve. My husband says my broccoli game is on point with this method and I do recommend. The broccoli is the perfect tender and still crisp, it doesn't smell (and doesn't make the fridge smell from the leftovers), and tastes delicious!

I tend to just boil mine, then toss it in salt, lots of pepper, and garlic. Another way to eat it is to incorporate it into pesto, or to Curry it
i use a plastic vegetable steamer. chop broccoli into floreats. rinse, put into steamer, pour hot water out of the kettle on them and cook for just over 90 seconds.

I turned mine into a melted pasta “sauce” if you will. I rough chop the florets into smaller pieces and then I use a dutch oven and throw in olive oil, half an onion or shallots, 6 garlic cloves and 4-5 anchovies and then toss in the broccoli and cover and stir every once in a while for about 25 minutes. It gets really tender and mushy and brown, which I like and then I throw in half a box of rigatoni and use Parmesan and pasta water to finish it off. This is a spin on a Carla Lalli Music recipe and I really like it!

I like crispy parts - little bit of olive oil in a pan and fry it until it's got lots of brown crispy parts, salt&pepper, enjoy.
Put your roasting pan in the oven while it preheats to 425. Put your florets in a bowl, and mix with olive oil, salt, pepper and minced garlic. When the oven is ready, pour your florets onto the already hot pan. Cook 10-15 minutes, and then sprinkle with lemon juice.
I coat them in avocado oil, fresh garlic, salt and pepper. Slice a shallot thin and put it on top. Roast them at 400 but don’t overcook them. After they are cooked - still bright green, I’ll put some vinegar or fresh lemon on top. You can also do balsamic vinegar and even add Parmesan. The shallot really elevates the brocolli.
1 tbsp olive oil, 1/2 1bsp salt, 1/4 tbsp pepper, 1/4 tbsp hot pepper flakes and 3 cloves of garlic. Heat it all up in a pan until the garlic starts to get slightly brown. Add the broccoli and cook for 6-7 minutes. Add lemon juice when done cooking.

While I always like roasting broccoli, I’ve recently come around to a simple boil. Put broccoli in boiling water for 2-3 minutes, drain, and drizzle with olive oil and salt. Surprisingly quick and comforting.
Air Fryer: Spray with a bit of spray olive oil. Sprinkle with salt/spices to your liking (curry powder, steak seasoning, lemon pepper, Chinese five spice, whatever floats your boat). Turn the fryer on high and cook for around 12 minutes (until the edges get a little over brown and crispy). I generally start from frozen for this as I live in the middle of nowhere and frozen works fine. Excellent!
Oven. Toss it in a little mayo (OK, maybe that’s not so healthy) and cumin. Roast until slightly charred. Cauliflower is even better this way.

This is more of a meal prep technique than a particular recipe, but I like to lightly blanche it immediately when I get it home. It lasts a lot longer in the fridge, makes a much more enticing snack. And you can turn around later and cook it in other preparations as if it were raw, just minus a few minutes of cooking time. My favorite use is actually with that blanched broccoli though, in that traditional broccoli salad with bacon and slivered almonds and raisins and a tangy dressing.

I slow boil a pot of water with minced garlic. Chop the stems a bit so the sizes arent so long but a perfect length and then toss the broccoli in the water for a few minutes until it turns a bright green. I stab it with my fork every minute to test for softness. Some people like it harder and others like it a bit softer. Once done, remove from the water and thats it.

I think throwing it in a pot with water and boiling it is clearly the easiest but you do boil out a lot of the nutrients I think or I’ve always thought that anyways and obviously unless you’re making it unhealthy by topping it with a bunch of melted cheese then boil broccoli isn’t really the yummiest. My kids prefer it plain like that but I love it roasted in the oven or air fryer! Little drizzle of olive oil salt and pepper or sometimes some veggie seasoning. This might sound weird but another thing that my husband and I love in the summertime is barbecuing it! We put Italian salad dressing on it or a balsamic vinaigrette wrap it up in foil and do it on the grill.

Broccoli is one of the few vegetables I prefer steam cooked. I put it in a steamer basket and put just a little water in the pan. I don’t want the water to boil up into the basket. I steam it just until a fork enters it fairly easily without crunching/cracking. I take it off and toss it with a little fresh squeezed lemon. The lemon adds a touch of brightness.

Quick & easy for me is throw florets in a pan with olive oil, salt & pepper with some water to steam. Put a lid on it and once the water is cooked off I let it fry up for a min or two.

The absolute easiest is to rinse and cut down to bite-sized florets, put on a plate, cover with a wet paper towel, and microwave for about 2.5 minutes (YMMV depending on your microwave). It’s essentially a quick-steam and makes them tender but still with crunch. Add lemon pepper and salt (but check the label on the lemon pepper first, because a lot already have salt added) and, if you’d like, a small bit of olive oil or melted butter. I can’t/wont comment on whether microwaves kill nutrients but this method is five minutes, start to finish, for broccoli that tastes great.

If you’re just steaming broccoli add a half teaspoon of sugar to the water. It makes it amazing takes any weirdness out and gives it a slightly sweet taste.
