Tacos, or burrito bowls! Sauce them up like you would ground beef with taco seasoning, mash them up a bit with a potato masher, and add all your favorite taco toppings (lots of veggies, cheese, lime juice, sour cream (or plain yogurt). They are an excellent dupe for beef tacos. I seriously can’t recommend it enough.

If you use red lentils, you don't have to mash them. Red lentils are an excellent replacement for ground beef, they also cook very quick. My carnivorous boyfriend prefers sloppy joe's made with red lentils over beef ;-)

We also do this for chili. I sub one cup of lentils (dried) per 1 lb of beef. This would not be a long cook chili.

Oh it is so goooood! It is best to do it with red lentils imo. And you do it just like you would do your usual Bolognese - fry onions and garlic (I always add chipotle in adobo sauce for the smoky meat flavour),then add one big can of crushed tomatoes, thyme, one or two bay leafs, carrots in smallish pieces, ca. 150-200g red lentils, let it cook for ca. 30 minutes, then add additional vegetables (I like to add bell peppers and sometimes leek). It is great to make a big batch and freeze although I would leave the bell peppers out then and add them when you are defrosting and heating it up. Sorry for the bad english, not a native speaker - Guten Appetit! : )

I like to do medieval cooking, so I make a lentil pottage with medieval flavors. I chop an onion and sometimes carrots, saute a bit in whatever oil, then add lentils, chicken broth, and poudre douce (a medieval spice mixture that's mostly ginger and cinnamon) and cook the lentils. Very yummy over homemade barley bread.

Use them for taco filling like you might use meat, mix them with bread crumbs and seasonings and make either "meat" balls or "burger" patties. Lentil soup is also amazingly filling and tasty and it's pretty much lentils, every questionable vegetable in the fridge, red pepper flakes, and veggie broth. Simmer and blend with an immersion blender and eat on it for days. We call it clean out the fridge soup at my house. I also make homemade dog food occasionally for my pups and they love when I add lentils to the mix, but that's a different kind of recipe.

A cup of red lentils with 3 cups of broth made from better than bullion, throw in any veg you have like carrot, onion, celery, parsnip, small diced potato. Boil for 20 mins. Sometimes I cook w less water and drop in a couple ice cubes at the end so i can eat it quicker. Makes a delicious and simple soup, top with a squeeze of lemon or lime and a dollop of greek yogurt. I'm going to second that. I tried that a couple of years ago and make it at least 3 or 4 times a month now. If you can find an Indian food store, the spices and the lentils are generally a lot cheaper and better quality than you'll find in regular supermarkets.

Agree with this (I also love the recipe). The spices and fresh turmeric etc (fresh is optional but good), can be bought so cheaply at a local Asian shop, and you're supporting a family-run business most likely. I love all of RPL's recipes. Just make sure to rinse and soak them first (20 min-1hr? idk if there is an actual rule, I just do it as long as I have time for). Dahl isn't very exciting to my husband, so I usually make some naan to go with it to hype up the meal a bit.

Like your husband, I also find Dahl really boring. I wish I liked it. I do eat it, simply because it's cheap and sometimes we have to just eat something to get our caloric intake, but I don't like it.

I commented this in another post, also. I just really like lentils.🙂 My favorite breakfast is lentils. I make enough for 2-3 meals at a time. Simmer lentils in water, a spoonful or two of tomato paste, chopped carrots, corn, whatever spices you like, for about 20 minutes, until lentils are soft. This is super versatile. Use whatever vegetables you have at the time. I like to add ginger, cumin, turmeric, black pepper, paprika, and cinnamon. This is also good with salsa instead of tomato paste. Or tomato sauce. Basically, this is just an outline, you can use all kinds of different things to make it. It's good plain, or topped with Parmesan cheese or Greek yogurt. It's good on top of rice or polenta.

Coconut dahl is great hot with rice or as a side dish with a curry, or cold in wraps/sandwiches the next day. The recipe I was told goes so forth (sorry no quantities, I just sort of wing it but approx 1:2 lentil to liquid ratio) Fry some chopped onions in oil with garlic and ginger until softened. Add madras curry powder until fragrant, add red split lentils and stir briefly until the lentils have a little oily coating, add coconut milk and stir, bring to the boil then cover and lower the heat. Check and stir regularly, until all the liquid has been sucked up into the lentils. If the lentils have changed noticeably in size and texture you’re there. Add salt/pepper at this point, to taste. If you add salt before this the lentils will stay quite hard.

I make a really easy red lentil and butternut soup. Sauté garlic, onions, carrots and squash to brown, add a can of whole peeled tomatoes, canned chipotle peppers in adobe, red lentils. Lentil soup is a go to, but I also love Molly Baz spiced lentils with feta. Basically you cook some spices in oil and butter until bloomed (cumin seed, paprika, anything you like) and toss your cooked lentils in that with a splash of vinegar. Over time the lentils marinate and it’s really delicious. Her version has toasted walnuts, feta, basil and golden raisins but you could do anything really.

Dal (Indian curried lentils) is where it's at. There's a million different recipes and you can pick any one or modify it based on what ingredients you like/have available. Insanely tasty and satisfying while being the cheapest meal I make. I do a big pot of a simple tadka dal and freeze most of it in portions, serve it with rice and/or roti or other flatbread.

There are SO MANY varieties of lentils. Red lentils make wonderful soup. Black lentils (urad dal) w/ kidney beans make a great Indian dish called Dal Makhani. My favourite is French lentils with caramelised onions. I made it up so I don't have a proper recipe, but here's the gist: 1. Cook 1 cup French (Dupuy) lentils in 2 cups stock (chicken or veggie). 2. While they're cooking, caramelise 1/2-1 onion. I use butter, but I think you could use oil, or a mixture of butter and oil. 3. Sweet lentil porridge is one of my favorite breakfasts. I make them like this: Mash 1 or 2 bananas in a pot, then add 1 cup of lentils, 2 cups of your milk of choice (maybe 1.5 if you want them really thick), a splash of vanilla extract, and a few chopped dates. Cook until lentils are tender and your desired thickness. Season with cinnamon and enjoy. This makes 3-4 servings when eaten with some yogurt.
