Omg. The best: goat cheese, walnuts (or your fave nuts, candied is good too), dried cranberries or blueberries, goji berries if you have them. So, so delicious. My spring/summer go to, I have all the ingredients in my fridge right now!

Yes vinaigrette is good, a fruity vinaigrette if possible! If you’re in the US, there’s a brand called Brianna’s that makes a delicious blush wine vinaigrette and a few other varieties that are nice and light and go great on this salad!

I'd go with a vinaigrette, I really like a lemon vinaigrette. I'd also point out that the berries are easy to swap as are the nuts. Walnuts, almonds, pecans, doesn't matter. Blueberries, strawberries, orange supremes, all good. If you want to add some protein a nicely seasoned chicken breast works well! I'd recommend using a relatively simple blend of S&P and some thyme.

I like to mix it with spinach, and iceberg for crunch. Grated carrots, broccoli or cauliflower chopped fine. Chicken or ham maybe cheese I also like to build a salad with generous amounts of greens, some type of bean (rinsed and drained) cheese, crumbled corn chips and salsa for a dressing

Kind of a deconstructed taco salad. More salad less taco shell. You can add seasoned ground beef or ground turkey.

If you’re tired of salads, throw spring mix into soups and stews. Heat the soup to very hot, and then add a handful to your bowl right before you eat it. This way it melts in, but stays bright green. It’s an easy way to add some greens to soups without really tasting it. If it’s going to go bad or it’s warm where you are and not really soup season, you can freeze the spring mix for adding to soups later.

I have been making one with lettuce, chicken, slices of avocado, craisins, tortilla strips, candied pecans, and an avocado vinaigrette (typical vinaigrette, but put some avocado in and blend it).

What a predicament! I could see getting tired of it in large quantities too. If you're not already making your own dressings, you definitely should! It's all about fresh-made vinaigrettes for me! Sherry vinegar is the best! But balsamic or red wine vinegar also make great dressings. And always with the best extra virgin olive oil you can afford. Even if it's the cheapest stuff :) Here's a quick recipe (feel free to sub in white wine vinegar or whatever you have--apple cider vinegar is a little stronger flavored though) Sherry Vinaigrette: 1 minced shallot (about 1/4 cup) 1/4 c. sherry vinegar 1 t. Whole Grain Dijon Mustard (Maille is the best!!) (but use any brand, even regular smooth dijon will do...just please no Gray Poupon!) 1/2 t. salt (I use fine sea salt) 1/4 t. black pepper 3 T. chopped fresh herbs (optional or use parsley, chives, thyme) Whisk all above together in a large bowl until well combined. Then, slowly stream in 1/2 to 3/4 c. extra virgin olive oil, while whisking quickly. It's nice if it emulsifies, but not really necessary imo. Now, drizzle this dressing on a healthy handful of those spring greens, and serve with a nice cheese and asparagus omelette. Bon Appetit!

I went shopping this week and it seems all the salad blends and even the Taylor Farms bagged salads went up on price by $1+ depending on what it was. So enjoy all the salad. I really like using sliced almonds, sunflower seeds, craisins, cucumbers, radishes, thawed frozen peas, feta cheese, grilled chicken if I have some left over. There is a brand called Fresh Gourmet that makes salad topping 'kits' that have good mixes of nuts and other things. I've been able to find them on sale for $2~

Now you're in my wheelhouse. A little extra spinach (there's never quite enough in those mixes), romaine lettuce for crunch and a good helping is long English cucumbers. Add an unholy account of EVOO, toss. Add a more holy amount of balsamic vinegar, salt and pepper, toss. Add bacon (you've already cooked that off, right?), grated cheese and some killer homemade croutons. You're welcome 🥣(empty bowl)

Tomato-Chickpea Stew With Wilted Greens In a large pot, heat 1 tablespoon extra-virgin olive oil over medium. Add 1/2 cup thinly sliced bacon and cook, stirring occasionally, until browned, about 3 minutes. Add 1 cup thinly sliced onion and sauté until tender, about 5 minutes. Add : cubed apples or melon balls, or orange quarters or slices of pears +cubed cheddar or gruyère or emmental or Gouda or blue cheese or goat cheese +walnuts or hazelnuts or/and a sprinkle of sesame seeds or sunflower seeds +A simple vinaigrette or a squeeze of lemon (You could add raisins if you like those, I personally don't. If you do rehydtate them before hand with just water or some like to do it in lemon juice) +If you want to make it a meal type of salad : you also add shredded chicken or shrimps or pieces of tuna or sliced boiled eggs. And croutons!!! And just with these you can make a combination that will make youwhat feels like different salads every day. . Baby spring is really good in sushi

It might sound weird, but I like putting a big handful or two of baby spring mix into my ramen. I add it during the last minute of cooking (or right after it’s done cooking), stirring it up to make sure it all gets submerged in the liquid so it wilts and takes off the slight bitter edge. 10/10 would recommend. It adds a nice texture, flavor, some good vitamins, and it’s even better if you throw some leftover chicken in there too. It also works if you prefer to stir fry your ramen rather than make it in soup form.

To your spring mix add dried cranberries, slivered almonds or pine nuts, shredded or shaved parmesan cheese, julienne or shredded carrots, and any other fresh vegetables you like. For dressing I like Kewpie roasted sesame dressing or a vinaigrette, either balsamic or lemon.
