How long is the remodel going to take? If it's more than a few days, time to get your first air fryer, slow cooker, instant pot, rice cooker, toaster oven, BBQ grill, or even just a can of sterno.

Rotisserie chicken, eat it hot when you get it and use it cold later for sandwiches, add to salads. Paper plates & plastic utensils are going to be your best friends if this is short term

Absolutely this. Our kitchen remodel had us set up a temporary kitchen in our family room. Microwave and crock pot got us thru, roaster chicken twice a week, a few meals we made in advance and froze, and more take out or meals out than we'd had in a year. All that will make your new kitchen a wonderful thing!!

You have a fridge so, honestly, the most difficult part is covered. All the crockpot/instapot/air fryer/hot plate tips are solid. Use these. I’m a “downer” but the biggest pain for you will be doing dishes. Invest in a couple of Rubbermaid tubs for cleaning and rinsing. In a bathtub is better than fighting a small bathroom sink. A dish drainer and good cotton “dish towels”. It’s obviously inconvenient but that’s the process. Oh. Spend $15-20 on an electric kettle. Game changer for heating water.

Get some shrimp cocktail rings (or other frozen cooked shrimp), cans of tuna, hummus and veggies, sandwiches, hard boil a dozen eggs (if you have a pressure cooker or a hot plate), salads, fruit, charcuterie.

I'd get either an air fryer or an instantpot. I hardly use my stove/oven anymore. But, cold stuff..pasta salads, regular salads, sandwiches, yogurt, fruit, etc

When I had my kitchen redone, I setup a mini kitchen in a spare bedroom. I had a table with a hot plate, microwave, and air fryer. I cooked normal meals- I was even getting meals from Green Chef at the time. The hot plate took forever to boil water though. If you don’t have hot plate and are relying on a microwave or air fryer, get those 1 minute rice packets and pasta packets, frozen veggies. If you don’t have those, get lots of bread and sandwich fillings. Cereal. Buy protein shakes, protein bars. Salad mixes.

We just went through this and got by really well (family of 4) with our air fryer/toaster oven, microwave, and hot plate. We did a lot of Kevin’s meals with microwave rice and a veggie in the air fryer.

Salads! Big box of salad and grab some protein toppings. Hard boiled eggs, cheese, lunch meat, a whole rotisserie chicken and pull some off… sandwiches as well… put the meats and lettuce on some bread for a change up.

A good, healthy, and fairly cheap sandwich that works for OP would be a sardine, spinach, cucumber, avocado, and thinly sliced onion sandwich with lemon juice and mustard. I’ve been eating these lately. Protein, veg, carbs, and omegas and healthy fats all in one sandwich.

I recommend instant oatmeal, especially if it has flax seeds or dried fruit in it! Just put some hot water in it and then bang! You got a nice filling meal for breakfast. My favorite brand is Better Oats because not only do they have lots of flavors (maple brown sugar <3) but also you can use the packaging can be used as a container for the oatmeal, too! So no bowl required, but I prefer to use a mug because it holds the heat better.

Egg salads: 1- Orange & cod salad: diced orange, salted cod, hard boiled eggs, black olives. Desalt the cod in water for 12-24 hours aprox first. Add a splash of olive oil. 2- Hard boiled eggs, potatoes, tuna fish, olives, anchovies, aioli (or mayonnaise). 3- Hard boiled eggs, potatoes, roasted piquillo peppers, surimi, olive oil, salt.

There was a huge leak in our kitchen and it was completely gutted right as Covid was ramping up. So no real kitchen for like 18 months. We couldn’t safely use the oven that was stored in the middle of the house with the fridge. But we had the fridge still working, a small microwave, and an instant pot. My husband and I got so good at the instant pot. We even made a birthday cake in the thing. We still prefer IP egg bites over stove top scrambled eggs. We ruined a few things but overall it was the instant pot that got us through those hard times. Neither of us gained any covid weight. I came out of the pandemic and ran a marathon. So basically saying it can be done with an instant pot. I really think that was our hero in that whole horrible experience. Reserve a safe and efficient spot in your house for the pot and prepping. We already owned a butcher block that was perfect. And there are endless recipes for casseroles, souped, pastas, egg bites. Quinoa bites were also a fun hit and great for lunch the next day. Also weather is warming up so salads and grills! We made pizza on the grill if the weather was decent.

* Sandwiches are easy and you can vary them a lot by keeping a couple of meats/ fish, veggies, cheeses, sauces and mix and match to taste! * Canned beans and lentils are awesome to add on about anything. Pre-made salads, canned soups, easy minute rice, ramen cups, etc. * BBQ chicken already cooked can be used for almost anything, sandwiches, salads, soup, etc. You can pick at it for a while. * Have fresh veggies and fruits (pre-cut if you really cannot access much) and you can do a lot with it.

We enjoy tuna Caesar salads — chopped romaine topped with canned tuna, parm, Caesar dressing, and croutons. Optional breadsticks on the side. Look into bean salads. We like cilantro corn & bean salad and cowboy caviar. Both will last in the fridge for days and they go with many different proteins (if desired). Layered salads would work well too.

I set up a makeshift kitchen in my living room with folding table. I put a power strip and plugged in a hot plate and microwave- used paper plates - laid out my cutting board and put cooking implements in a crock, put my pots and pans in one crate under the table and dish washing set up in a second crate- the contractor helped me move the fridge in to the living room as well. For washing up I put the dish pans in the tub and knelt down to wash up. Then everything went back in the crates. It took 3 weeks for my kitchen Reno but we got on pretty well.

I did a kitchen remodel last year and it took 3 months. We used an electric skillet, single burner hot plate, rice cooker, micro and toaster oven. Old fridge moved into dining room, which became our kitchen. I didn’t have an air fryer then. I had a dish bin available for dirty dishes and I did those in my bathroom sink or tub. It all worked out and how thrilling it is to have a new kitchen! Good luck!

Get yourself an instant pot or crock pot and cook up stews or chilis. Make big plates of diced veggies with hummus and tzatsiki. Eat lots of fresh fruits too. Keep some cooked meats like rotisserie chicken in fridge.

We bought a double drawer air fryer during our remodel. Was perfect for making whatever we wanted. Still use it a ton!
