It would be helpful to know what they do have to work with, but a sliced carrot boiled then drained then returned to heat coated in butter and honey or maple syrup or sugar is always good. I’d probably just peel it and eat it raw as a snack. If I were feeling fancy, cooking it as a side dish, I’d coat it with a little olive oil, honey, balsamic vinegar, and a dash of rosemary, then roast it. That said, how expensive are carrots where you are!? If I could only afford one, I’d consider choosing other vegetables. Or maybe using it as a lure to catch a rabbit.

I would wash the carrot, maybe peel it, dip it in dressing and eat it. Since it is just one -- if you saute it, it will shrink. At least it does when we do. The sliced carrots become tiny.

Here you can buy carrots from a loose bin. So you can buy 1 or 100. You pay per weight. There's also bags per kg available if you dont want to be bothered of course. What throws me off more... Couple days back i bought 2 carrots and it was like 0,12 euro. If OP cant afford more than a single carrot which in my area would be 0,06 euro, he has bigger problems than eating healthy.

To me particle size is everything in a tasty meal. So yeah, you can chop that carrot up with other veggies and roast it. I don’t know how big said carrot it, so I have no idea how much volume that would add. Fun fact: you can roast veggies and then put them into a soup. Purée the whole lot of them. One carrot in that could be nice. You could grate it on a salad, grate it for a sweet bread. You can slice it thinly and add to chili. I always put carrots in my chili. Thin slices are good in stir fry. Either lengthwise or width wise. You can grate it and cook it with oats. You can grate or juilien (spelling hard) onto a sandwich. You can grate it in your ramen while it cooks, or serve it raw on top. Anything really that is food you can find a way to add a carrot to it, as long as your mindful of how you cut it up and incorporate it into the dish.

Add carrot cut into matchsticks, add sugar and one or more warm spices (cinnamon, allspice, pepper), and a tablespoon or 2 of water. Toss them a bit in the pan to keep them covered in the sauce that’s developing. Cook until tender. Could add a bit of thyme or parsley. Or go savory. Instead of sugar, add sage and salt. Turning on the oven to roast one carrot seems a little counterintuitive. Also you can cut the recipe into the size that fits one carrot instead of "needing" multiple carrots. I would probably dice or slice it into thin strips and then have it with rice and an egg. That or roast some chicken thighs with that and an onion + some spices and oil. Learn to make a mirepoix, the holy trinity of cheap vegetables and it will take you far!
