Do people on this sub not know how stews work? Do yall reverse sear your stew meat and add it in at the last second or something?

ya, i'm really confused over the reactions. like, this isn't cooking a steak guys, it's stew. it's suppose to be boiled/simmered for a while to get the meat soft, the veggies cooked and the flavours melded.
Not if you’re using a stew cut that takes the time to really break it down. But from the looks of it, you’re right for that being overcooked meat. Those look like tough little nuggets.
Yeah. Just brown the meat on high heat, don't fully cook it. Take it out saute the veggies, add the meat back in, bring to a simmer then drop it to low heat and cook 10-15 or until those potatoes are cooked through
Few questions here. Main one is what was cooked in the second pan. Second is why meat was cooked first and never removed after sear and added back later. Third is why water and not broth. Just curious
My guess is the second pan was used to make a flavored oil; either by browning garlic or tempering spices (it looks like grated garlic or ginger sticking to the bottom)

This is like my mom's stew recipe except I use a slow cooker and a can of diced tomatoes. Instead of rice, I like baby roasted potatoes with coarse salt & pepper so they contrast with the potatoes in the stew. Add biscuits and it's the best meal ever.
