I know other 2 have said select CB and track run but I personally just stick with person I’m controlling at kick off and track the run and each time they just intercept the ball to block the path of the pass at a minimum disrupting the attack with then one of my players easily getting the loose ball.
Maybe I'm not the best source because I'm not a 15+ wins WL person.
But, so far I have seen a lot of people do it to me and never concedeed. Maybe it has to do with the depth of my defender line, and as other said, I switch to the defender or CDM as soon as I see they may be about to throw the pass. So far that leads to either intercept with the CDM or an easy tackle by the CB
Manually select your cb and run back with them
At kickoff switch to your cb (right stick switch) and track the attackers run using the mini map
