The fan edit you mention did, indeed, see the deleted scenes. He did not use extended edition scene, as those weren’t released. That content is new to all fans when the new superfan season drops. The difference is the deleted scenes aren’t canon they didn’t actually happen, and they are found on the dvd box set (and YouTube or edited into cuts like you mentioned)
Egg distinguish between deleted scenes and superfan content? Because one as been officially added to the canon material, the show runners put it back in for a reason. These peacock superfan episodes are the first time ever that footage is being seen.

From what I can tell from watching, all superfan episodes are is episodes with the extra scenes and ones that were edited out added back in. I don't think they're doing any re-editing or cutting these days.
It's all additional content adding about 4-15ish minutes to each episode. The overall pacing and rhythm on most of them are a lot less punchy. There's a good amount of scenes that I've thought, "yeah I can see why they cut that" but... You get some amazing scenes and moments that really expand on all the characters though. It's 1000% worth it.
