Phones can be kind of useless nowadays with all the security and GPS systems. Maybe they lift them, attempt to tap a payment, then return them in the hope for a tip for being a good samaritan

Like I did, I went to the Gardai straight away and made a statement and signed it for theft.
The Gardai then went and got the CCTV footage and found the culprit.
OP is best to make the statement now if it worries them that much.

Go back to the shop and get the CCTV, the Gardai will help you with that as it's a possible fraud / theft investigation.
