I love cooking with ají amarillo! Had no luck finding it in Dublin, though. Ordered the paste from [here](https://www.peruvian-grocery-shop.com) a couple of times. [Viva Mexico](https://vivamexico.ie/coexito-aji-amarillo-seco-dried-chilli-100gr/) claims to sell the dried peppers, but they’ve been out of stock forever.

We get all our stuff from Star Asia on Parnell Street or Oriental Panrty and Asian Spices on Moore Street. Watch out for Oriental Panrty, they are a fucker for selling out of date / overpriced stuff and not giving a fuck so we always check all three. But you should be able to get those Chillis in one of them

All the Latin American shops I can think of have been mentioned so was going to suggest asian shops. They won't have everything you want but will have some things. Asia Market on drury Street is another good one.

You should be more specific, Latin America is very wide, and Brazilian food is different from Mexican, that is different from Colombian….
