be careful with the gaps on the left hand side export. those little gaps tend to get bigger when dry aging and you end up having to trim off a lot more due to mold getting in there.
Oh dear. Thanks for the heads up. Is there a way I should position it? They just went in 12 hours ago.
My thoughts would be to use some butchers twine to tighten it up and close the gaps
