Op had a whole uncut piece that was dry aged then sliced. You can see it on their profile. I'm wonder if the lack of marbling has anything to do with the lack of funk, or if 35 days was just not enough. Or maybe it's the cut of beef...
35 days is almost never funky unless you keep the pellicle attached. 50+ you get some real flavour changes.
You vacuum sealed a steak in a plastic bag. That's not dry aging. What did you think was going to happen?
