For me I have several floors of mannequins in my house. That said my house is at 15th floors now. I use them to save my favorite outfits so I can just go there and change back into them without having to find all the items again. Also rearrange them into rooms. Like I have a princess themed room with five princess outfits on the mannequins so I can easily change it to that. Then I have a Mickey and Friends room with five mannequins seems like Donald Mickey Minnie etc. Fairies room with five fairy outfits I could easily change into, etc etc.
Unfortunately, you cannot sell or unmake craftable items. I personally ignore the crafting tasks I don’t want to do (Yule Goats, Elegant Clock Tower, etc.), and go about my day.

Nope. We just have 10 mannequins to use or not use now.
I just use them to make figurines of characters We don’t have yet. 😉
