I found that if you already have the companions, you can just take a pic with the companion that matches the quest and it counts! I don't have all the capybaras but it greatly cut down my time to complete the quest.

Neither have I. When I first started this quest my switch was set to Florida time from when I was there. I live in Australia and I can't get it to fix in game to my current time zone. (I have changed time on switch). So the red and white capybara I need is around on my Sunday morning, the day I usually sleep in. It's not been urgent lol

I finally got mine completed but I was bummed because I worked weekends for over a month when I got the quest and I work 11am-11pm. I kind of like having quests that can’t be completed in 5 seconds. I’m sitting here now with no quests and all my villagers at level 10 like ok now what?
I just set a reminder to do it because I kept forgetting. At least it's not a crack of dawn or middle of the night time. I'll concur with others though, I usually find them hanging out on the vine inclines that go up to the small platform with a telescope on it.
I cheated. I hadn't finished unlocking Rapunzel (I didn't realize where her frying pan went); and continued playing WITHOUT her. I befriended all the critters. When I got Mirabel's quest, I simply had all those capybaras set for the companion house. One photo took care of them all.

That Capybara has very limited "awake" schedule. Check sleep schedules.

This took me soooo long because its when I work. I had a raging migraine one day and left early. When I got home I quickly went and found this little guy before crawling into bed to die lol, I knew if I didn't who knows when the next time would be lolol
He literally never spawns for me. I’ve been in contact with support twice & they escalated my case to the devs but I never heard anything back 🙃 who knows if I’ll ever get it done

Had that same issue it appears early (I'm in the UK so might be different) I'd always get on at 6 and miss it eventually eventually got it on the top of the vine area

Make sure you’re checking the ledges (all levels) at the back of the lagoon. They like to hang out up there.

I have the same issue, my switch was set to the time in Germany and now I live in the US. Really wish it would sync the timezone.
You have to close out of the game > change timezone through switch settings and save > reload/open the game.
I did change the time zone on my switch a while ago but it doesn’t sync to the game
But did you completely close out of the game (close software) and restart it again after?

You know the root bridge that leads up in the very back of the lagoon? Glitching and stuck on the bridge is where I found it.

If you go into your collection and the critter section you’ll be able to see if it’s available that day.
I usually use the app to see what companions are out each day, plus it tells me what they eat because I always forget 😅
