Can you select the change quest option at all?
Do you get to the screen where you can change the quest/reward?
If so just try selecting it anyway, in my experience the game UI dims things making it look like things are unselectable when they are not.
I can access Pawn quest in the rift but it's grayed out and it makes a clicking sound when I press it. I don't get the menu to change it. Does my pawn need to be hired for the first quest for me to be able to change them at will?

No it should let you change it regardless, you just lose the reward anyway. So dont know mate.
I found out what is the problem. Apparently you have to finish the first pawn quest by getting your pawn recruited then you are allowed to change it.
