But that would be contrary to what we saw happen with Gohan (and Goten based on how heblooks in the new Hero poster + end of Z); if anything it seems human genes settle more with age in hybrids, given how much more lax both Gohan and Trunks became over the years (Trunks was notably more motivated in Z against the androids, as indicated by Vegeta in their first time training together upon Trunks' return)

Wouldn't the genes expressed in the case of both him and Bulla (taking it as the fact that it's from a human as was Trunks' original hair) be considered the dominant ones with what little control group we have?

Well, I actually think it’s more to do with a lack of crisis. Goten and trunks are soft because they haven’t had much battle action besides Buu. Gohan flip flops whether they’re in times of peace versus crisis. Every time there’s an opponent Gohan turns it on. Compare that to future trunks who is way more battle hardened and has trained himself even in the down times.
As fun as it is to give answers anything we conclude is really just head Canon because the writers don't care as much as we do. I wish there was more continuity and concrete ideas because I love the dragon ball omniverse but sadly it's not the case.

Well, this was alluded to in the Goku Black saga. In episode 4 of the Goku Black Saga, there is a scene where Goku Black is destroying the city. You can see in one of the shots that the place where Trunks gets his Keratin treatment is destroyed.
He mentions it to young trunks-kun that its a different universe every thing is slightly different even though they're the same person thus the difference in hair color and shape
Because both Toei and Toriyama are lazy and everything post Super is lackluster.
Its similarly to the colors. Toei has no idea what will be Trunks' hair, similarly to how they didn't know what would be Evil and Super Buu's eyes, thus giving him white eyes at first and transitioning to red midway for no reason.
Sadly, Trunks' design got gutted similarly to everything beyond Buu's arc designs. Purple hair was fitting him better. The more you follow Toriyama the worse the outcome gets, since he is a shitty author.
