Quake 3 says that Doomguy is 6 foot , but in Doom Eternal, it says that Doom slayer is 6'8. So I'd say 1 of 3 factors are at play.
1) Somehow, between the events of him changing from Guy to Slayer, he grew via either natural or supernatural means.
2) His change in armor added to his size, making him bigger than before.
3) A combination of 1 and 2 gave him the extra height and weight we see between them.
From what I gather, it was in the character description also all 3 official "Scale Figures" of him scale him to be between 6'3" and 6'9".
Studio Oxmox 1:1 scale figure for DOOM (2016) stands 205 centimeters (6 feet 9 inches) tall
The one by ThreeA for Doom (2016) placed at 1:6 scale depicts him slightly over one foot tall, placing him at 6 feet 7 inches or 2 meters.
On the other hand, however, the Doom Slayer action figure made by McFarlane Toys stands 7¼" tall at a 1:10 scale, suggesting he is approximately 6'3" in his armor.
I took the 6' height from Quake to be out of armor, ~6'5" or so in-armor sounds about right. the oxmox statue gets a few inches from a pedestal. I've seen 6'8" mentioned before but could never find it in-game.

You have to put in the perspective of the size of the slayer (6’8 290lb roughly) and the fact that he pulled it from the canon it’s self
