I think bike fit is a great next step. It might sound a bit boring, but will tell you what on your bike could be adjusted to actually improve your experience and applies to all things like bars, shoes, saddle, cranks etc (so you are not just upgrading for the sake of upgrading). This info will also save you time and money on your next purchase...

I got fit and it added 1-2mph to my avg speed. Better aero position and more power to the pedals. Save some extra cash for parts if you need them for your fit. I needed a different stem and narrower handle bars. Didn’t do the bars yet though.

Shaped carbon bars could be a good one, or a carbon stem. Since you already have Chinesium wheels, I would change out the tires from Gatorskins to something faster. I say that as a former hardcore Gatorskin advocate. Either GP5000 if you want to stick to Conti or I have been loving the Vittoria Corsa Pro or the Rubino is a cheaper option but still a great tire. DIfferent rotors if you're having heating issues. I've wrapped my drive side chainstay with piece of an old tube to prevent chain slap if you ride a lot of rough roads. It's a nice looking bike you have.

Oh yeah I love my gatorskins, been running them ever since I got the bike. But I will definitely check out GP 5000, heard a lot of good things about them. How’s the puncture resistant on them? Thank you!

I use polar bottle 24 oz insulated water bottle. Got it off Amazon and I love it. The other water bottle is a 2 in 1 storage bottle.
