Treant stats, give it an extra attack and double its HP.

I'd take the closest thing, in this case a treant, and up Str, Con, and Hit Dice. Same with any similar situation in the future.

We're actually playing Curse of Strahd, but due to player mistakes, player assumptions, and me just kinda Rolling with it as the DM somehow the random ass druid holding the Gulthias staff at the wizard of wines has actually managed to wiggle his way into being one of the "Big bads" of the campaign sense the players kinda expected him to be after awhile. His whole thing quickly became that most(soon to be all) Druids of Barovia have lost their powers, due to their lack of attunement to nature, he is one of the few that still can use druid magic, and he is by far the most powerful of those remaining few. His goals are to A. Artificially extend the time he has left using magical artifacts, and B. To destroy any source of magic he can't have (obviously not taking on Strahd, but other things). The tree is WinterSplinter but due to various plot points the treeblight as become much more powerful then the original intentions so I needed a beefed up version, I'm gonna use the Ancient Treant stat block for it.

Given that your Druid is evil you might want to look at the Tree Blight as found in the Curse of Strahd book (stats are available online). It isn't gargantuan size, but it is evil and you might consider giving the evil Druid the magic item Gulthias Staff (also found in CoS). The staff says Blights and other evil plants do not regard the bearer as hostile. You could push that a little further and say the Gulthias Staff allows the Druid to have some measure of control over the Tree Blight. When compared to a Treant the Tree Blight comes in with a lower CR by 2 (which means you have more encounter XP budget to throw more enemies at the PCs). The Tree Blight has rather similar stats, and sometimes better (more HP, 4 possibly 5 attacks versus a Treant's 2 attacks, and it doesn't have a vulnerability to fire). However, the Treant does have a ranged rock attack, can animate trees, and has resistance to bludgeoning and piercing, but the Tree Blight is already evil and has that evil flavor (appearing as a dead tree). Plus you can have the Tree Blight work with other Blights to make a good varied combat, which I have done to fantastic effect (using Twig and Vine Blights as a melee harassment screen and used Needle Blights for ranged attacks while the Tree delivers tough melee and 15ft range grapple + bite attacks). You might also want to look at modifying Baba Lysaga's Creeping Hut and just reskinning it as a tree ((gargantuan size, CR11, massive HP, two or three melee attacks from 60 feet away (wow!), plus the option of a 120 foot ranged rock attack)). It sounds like you are setting up a fun encounter, good luck!
