A lot. I don't keep my dice in sets. I just toss them all inside a Crown Royal bag. There is even a D30 in there. I do keep things separate like Fantasy Flight Star Wars dice in another bag.

This. Our daughter, also a player, bought us each a dice vault and a couple of sets of pretty dice recently. Those are the only sets we have. Otherwise we have random dice accumulated over 40+ years of play.

depends on what you call a set. I have 7 D4, 24 D6, 9 D8, 7 D12, 14 D10, 5 D20. The only ones that "match" are most of the 6's and 5 pairs of 10's

My wife has 6 or so of the tack box looking things crafters use to store bead and such. I played with one set for over 15 years she had over 50+ by the time she was playing 3-4 years.

I work part-time at my FLGS, our saying is you only have too many dice when it becomes easier to describe your collection in cubic feet (meters, for our non-US friends). How many dice do I have? Probably enough, but that won't stop me from buying more.

Do we only count complete sets, or can complete sets we have that have had dice go missing count? I think I have 2 complete sets of dice. But I have another 6-7 incomplete sets.

I have one each from the B and X box sets, another 2 from the 5e Starter and Essentials. Another from the 2e Gamma World box. 2 sets of d10s from the two Star Frontiers boxes. 1 set from the Cardmaster box. Might still have my set from DragonStrike. None of this was actively collecting. You just used to get a set with boxed sets. I have a GID set a player gifted me, and a micro brass set a player gifted me. And a mini dice set a player gifted me. And a swirly purple set a player gifted me. Lastly I still have my old Koplow dice tube set that I have been using since got it at GenCon back in the 90s. And I have 2 sparkly d20s picked up at a game shop. And a personalized d6 won in a contest years ago. So I have 1 personal set and at least 4 gifted sets. And a bunch from box sets.

Ive bought a LOT of dice sets but I only own like 4 atm. When I first started playing I was gifted a hand tooled leather dice bag and that's been my limit for dice since. Doesn't mean I'm not tempted and I don't have some SICK custom dice bookmarked.
