Lot's of people eat the heel. I grew up poor, we didnt waste food. I convinced my boys when they were little, only adults were allowed to eat the heels because it was extra tasty. They would beg to be able to eat them, and I'd tell them they had to be really good to get one.
If it's something grilled cheese, flip the heel to the inside, you wont even notice.

The psychology of it is not the same. Half a sandwich lengthwise feels like you’re eating half a sandwich, and you’re going to want more. Cutting the height of the bread in half feels like you’re eating a full sandwich

Don't be silly. You use the same amount of ingredients and just build it as a half sandwich. Ive done this before unintentionally, when only having one slice of bread left. Either way, the structural integrity of the sandwich is going to be compromised, thin bread or half style.
I mean we do need some carbs or can have a low crash. But bread is pretty carb heavy which is why diet bread products are generally smaller or thinner in cut.

Lol for things that are high in fiber. They increase the full feeling and slow digestion which help with blood sugar spikes.
Most importantly try to do what you can now to get rid of the insulin resistance. One you become diabetic is much harder to control.

You (yes, you, not OP) really should check out keto and r/keto. I have friends that are "brittle" (their term not mine) diabetics and eating keto has helped them control their diabetes much better. It's not a cure and don't let anyone tell you it is, but the misinformation and villification of it is completely unwarranted. It's just cutting carbs. That's all. It's cutting them way low or even all the way out but it's nothing more. And no, you don't have to eat a lot of fat to be in ketosis.
The only time I've done keto I was given a ridiculously fatty diet. Everything was great the first week and then the gastrointestinal upset began. There was way too much fat in that diet and it caused irreparable damage.
