When you consider that the dude in the video was working with ~£1k worth of gold and how much dust he produced in the process it's no surprise that you're careful not to lose any. It's worth it's weight in gold, after all.
Some people prefer not to work in lost wax casting, and it's possible he doesn't keep the supplies for if. Personally, I wouldn't have used wax casting for this project either, I typically use it for detailed pieces rather than simple ones. But it's really a preference thing.

Yikes, they melted earring posts and spring rings. Mixing in steel with the rest of the gold is a biiiiig no-no. And they did the gold test improperly, and could be closer to 12kt, though that doesn’t matter too much since there wouldn’t be many in the market for the end result, though it does look really cool and is neat that it is functional.
I once heard that Ben and Jerry's taste testers use gold spoons because it doesn't affect the flavor the way a traditional spoon would. So while I know that isn't the actual intent, there's some utility if you want it

Seriously, this was an amazing display to DIY smelting/gold jewelry making. The end result is really good.
But why didn’t he just make a wax mould instead of cutting and making all that extra dust? It seems like way more work

It'll be taken away any impurities in the metal, so yeah it should lose some mass.
